We moved to Smith Center a little over a year ago after having lived in the Kansas City area for years. One of the things we love about our small town is the quaint atmosphere and the friendliness of the residents. The first time we walked into Center Fire Pizza, Mark and Susan were behind the counter and treated us like we were loyal customers. Small town "diners" don't typically have the fancy food, but looking at the board with the list of pizzas, it was obvious this wasn't a typical small town pizza place. Along with the traditional favorites, they also offer Margherita pizza, chicken/artichoke/pesto pizza among others, to surprise the sleepy small town taste buds like ours! While we waited for our order, Mark spent time telling us their story and talked about the brick oven. It was a TREAT to know their background and how they decided to open the doors on Main Street. The REAL treat came when we tasted Susan's salads and Mark's pizza, however. The salad is made to order and is fresh. Susan doesn't use iceberg. Her house salad is full of the good stuff. And, oh, the pizza. The dough is light and the crust crisps perfectly. Mark doesn't skimp on the toppings and it is oven to table, delivered by the creator himself. We HIGHLY recommend Center Fire Pizza. Coming from a larger metropolitan area, we would rank it as some of the best pizza we have ever had. We are from the Boston area where you can find lots of Italians and lots of authentic Italian pizza places. Our relatives even have a pizza oven in their yard. Never expected to find a great place for pizza in KS. Go there if you can. We had the cheesey bread, margherita pizza, and a vegetable pizza. All incredibly delicious. The crust is as tasty as it gets. I will pine for that pizza until I come back. All fresh ingredients prepared with extra care by the owners. Please don't go to the chain restaurants in the area. It has been a little over a decade since my last trip to Italy, where food is a way of life. The cities are packed with people, Vespa's whizzing by with bread and wine in the basket, yet it still manages to hold onto simple traditions. During my time in Naples and Rome, I ventured into many pizza parlors, which were not glamorous; actually quite uninteresting. The inside was hot from the wood burning stove, and the workers slung dough in the air as if they have been doing this since they were born. Although furiously busy, they all had smiles on their faces and chatted up the customers with delight. I learned a lot from the old country, and what a true Neapolitan pizza is supposed to be. I was sincerely shocked to learn that a new pizza parlor was opening in Smith Center, KS, yet Center Fire Pizza offers the simplicity and ambience of an old world pizzeria. Center Fire Pizza is right in the heart of Main St. on the corner of Kansas Ave. in a red brick building that was built in 1900. The location offers plenty of parking, yet the outside décor could use some help. Let's not get ahead ourselves, they did open only a week ago. They are open from 11-8 Friday-Monday, which makes sense for a new business in a small town. The family run business is everything I hoped for from a Neapolitan pizzeria; simplicity and all about the pie. The room is set up with an inviting atmosphere, seating on the left, and a chalk board menu on the right wall. The kitchen is clean with a vaulted ceiling, as the glorious wood-burning oven warms up the room. Yes, watching the massive oven in all of its wood-burning fury is the highlight of the whole experience, but I was more concerned with the little details. The Neapolitan pizza is not something we Americans are accustomed to. We have seen the flat crust of a New York pizza, the gargantuan size of a slice from Boston's North End, and even the Chicago deep dish has more in common with a three tiered wedding cake than pizza. Dare I even mention the atrocities that California has done with avocado's, yet the Neapolitan is a true measure of an artist. The Neapolitan pizza depends on fresh and brilliant qualities that Mark Shook (owner) has brought to this small town. He uses the proper technique that renders the true flavor of the Margarita Pizza. The pizzas come in one size, which gives about eight slices. Just like the parlors in Naples, Center Fire has an open kitchen, where you can watch and chat with the workers. The dough is made fresh daily, and the tomato sauce does not leave you clamoring for a gallon of water. The crust is light and airy, while even the pepperoni pizza is not drenched in grease. The pizza does not leave you feeling bloated and wanting an afternoon nap, while the different styles of pizzas are well thought out. My personal favorite so far is the Mediterranean with Kalamata olives. The downside to Center Fire Pizza as of right now is that it is new and crowded. This makes your waiting time on a Friday night up to an hour, and possibly even running out of fresh dough toward the end of the night. Overall, Center Fire Pizza does a magnificent job of provided beautifully crafted Neapolitan Pizzas to this area. I was most impressed when I saw one of the workers picking fresh basil off of a plant as she was preparing me a Margarita Pizza. Keep up the good work Center Fire! read more
