    The Iced Horchata Latte is amazing. I am glad they came to Del Valle, I cannot wait until that area is filled with food trucks!

There was a pretty measurable line outside the food truck, and I was worried the coffee might be overhyped based on how long the line was. After ordering a hot version of their Honey Lavender Oat Latte, I think they are owed an apology from me. I will always talk about the importance of balancing the espresso, syrups, and milk in a latte, and Noble Joe does it better than most brick and mortar coffee shops I have been to in Austin. It is significantly flavorful while still being espresso forward. I was genuinely impressed, which is hard to do after being the wreck I was post run. If you are on the trail, it is worth the detour. I live quite north so Noble Joes was a bit of a drive for me and honestly it's good coffee but a bit overhyped in my opinion. I bought two lattes - the seasonal blackberry crumble ($7) and the sugar cookie latte ($6), and although both had a good flavor, they both had all of the brown sugar that was supposed to be in them undissolved on the bottom and as best as I tried to dissolve it with the straw given, I had to wait until I was home (about 30 mins) to get a spoon to dissolve it. Personally I liked the sugar cookie latte the best! I would probably rate the coffee overall as a 7.5/10- definitely worth trying at least once! Service- 10/10 the baristas were very pleasant! Coffee-7.5/10 Parking- 7/10 (no parking lot but easy to find street parking on a rainy/slow weekday) Price- $15.16 ~ 2 coffees + tip, pretty standard for Austin

I get it, people are different and their tastes are different, but I still believe most people would find this coffee truly superior. Second, the specialty coffee drinks are creative and delicious. Sure, they can do you a regular cappuccino, a latte, or a cortado, and it'll be awesome. But try, for example, their miso caramel latte! I'm addicted. Third, the staff is super nice. They're always warm and friendly. Sometimes they work a little hard at it -- "And how's YOUR day going?" -- but better too welcoming than not welcoming enough. They have tons of options, including a 16 oz. size, every kind of milk (including 2%, oat, and almond), etc. etc. Prices are standard. Kolaches are available, though I haven't tried them. Espresso was so smooth and absolutely perfect! I felt the flavor combinations of tahini and blueberry also worked surprisingly well and it isn't on the sweeter side at all.

They had the Valentine's Menu already out and I got the Velvet Armadillo which was a red velvet cake latte that I got with soy milk, cream cheese cold foam and red velvet crumble. I enjoyed the drink even though plot twist I am not a big red velvet fan. I had never had a beignet, so we got the 3ct one not the valentine one. I will say it was hot and fresh and great. From what I read online Later Gator has Louisiana roots so basically you can say this was the closest I will get to one til I make it to Louisiana. The food truck manager provided different combinations of Matcha lattes made with (Oat, Whole or Coconut Milk) topped with Black Cherry cold foam. My latte of choice was with coconut milk. Wow...the combination of flavors had your mouth rejoicing. I found the latte so enjoyable to drink. The food truck manager was extremely prepared and incredibly personable. The food truck was quite eye-catching in vivid purple with their lattes even more memorable. Overall, Later Gator customers exuded a very chill vibe... Whenever I am in the area, I will definitely be trying more of their latte offerings.
