So at the last minute (literally a week before the party) I reached out to The Catering Company since I knew from past events that I've attended that they were a good local place. They could not have been more helpful or accommodating. Zsuzsi the catering director responded quickly that they could do whatever I wanted and offered some suggestions. We settled on shrimp po boys, muffuletta sliders, cajun chicken skewers, mini crab cakes with remoulade and maque-choux (I had never heard of it but it was fabulous). All of the food was fantastic and tasted like authentic NOLA. And, since no Mardi Gras party would be complete without it, they even made an incredible King Cake!
