Even though I am a Louis Prima fan (sorry for the obscure reference) the bone to meat ratio just doesn't make up for the higher fat content. At least for me. This guys ribs changed that. You don't eat these ribs so much as you hold them up and allow the meat to dive into your mouth like an Olympian off the 10 meter platform. They are that good. And I have eaten enough brisket in my life that writing a review including a reference to pork is probably something I shouldn't do publicly, but his is top notch. Lastly, I come on this site and often see reviews regarding the personal nature of the proprietor of the business, which are sometimes so vicious and misplaced, it is not a mystery why the writers of South Park want to feed some of the members of this site what they want to feed them. To that end, if you have a problem with either Dan or his staff, I would have to say that the problem is most likely with you. They couldn't be nicer, more courteous and helpful. I know that sounds like a lot for serving somebody BBQ but those fairgrounds on a weekend can be a certified nuthouse. At no time did I see anyone lose their patience or desire to help the customers. I find it a struggle to convey how much Sal's hard work and talent meant to making our wedding the day we had dreamed of, but never really expected. First, we worked with Sal months in advance and what we described to him were some of the meals we had in Portugal: fresh grilled fish, sangria, basically feasting Mediterranean-style. For the service, we wanted a relaxed and open atmosphere where guests could feed themselves. We wanted to give him a direction, but not dictate, because above all we hoped to have food that he was excited to prepare. It turns out, what excites Sal is divining the perfect meal from your imagination. The menu he outlined featured wood-fired pizzas, paella, homemade pickles, grilled fish, smoked chicken and an unending dessert service. It's now nearly 4 months later and our guests keep writing, calling, and telling us that it was the best food they ever had at a wedding. If it was simply down to the food, it would have been a 5 star day, but on top of everything, Sal was organizer of nearly all the logistics. Working with the event company and making sure our tent was ready a day beforehand was all thanks to Sal putting in a full day onsite before the event! We have so much gratitude to him, his amazing ability, and his very capable staff. He made our wedding.

Since Big Pink's is a food truck, there's limited seating (only 1 picnic table) but we live so close by that we've just taken it to go and eaten it at home! The employees are super nice.
