Casa Mexico is a tasty place to grab lunch or dinner in Independence. We enjoyed our lunch: beef taco salad and Pollo fundido (grilled chicken over a bed of rice with queso on top). We also ordered a side of chips and salsa. The taco salad had very fresh ingredients mixed in the crispy taco bowl/shell. The pick up time was incredibly quick and the food was ready to grab and go when we got there. Although we got the food to go, the service was friendly when we ordered and paid. Awesome atmosphere and great staff. Rice and beans maybe some of the best I've had. Chile Colorado came out in larger chucks than I'm use to do was a tad tentative. First few chunks were very tender and the sauce was great. I ended up running into a few fatty pieces which make you gun-shy of continuing. Chips and salsa were good and the queso was really good. Chips and salsa were great.The grilled chicken breast taco was ok. Loved the rice. The waiter was grouchy or something though. He acted as if we were inconveniencing him by being there. He wasn't friendly at all!! A kid kept screaming at the top of its lungs and no one said anything. It was ear piercing and rude. I'm not going back. This is my favorite restaurant of all time and where we take friends and family to celebrate. It is as close to home cooking you will ever get. The chips & salsa came out quick. The chips were nice & warm and the salsa was good with a bit of spice. My sister ordered the Super Burrito special of the day for $8.99. It is very large, and she liked it. I ordered the half size quesadilla with chicken. Both dishes were served with shredded chicken. I'm not sure if grilled chicken was an option or possibly available at a higher price. But, the only thing I would recommend is more flavor/seasoning in the shredded chicken. Our table did not have silverware, but we just grabbed it off another table. And, the waiter brought extra napkins without us having to ask. Music was playing in the restaurant, but we were also seated near an employee on break who was blasting music and not using headphones. It was hard for us to enjoy our dining experience listening to two different songs at the same time for 15 minutes. But, this can easily be corrected by having employees use headphones or not play loud music during their break. read more

Stopped here before a Mavericks Game. Summary: service was excellent, food was not. The hostess was very nice and sat us promptly. Our server was quick to bring chips and salsa but our first red flag was the chips were cold. We ordered queso and it was just fair. Our server was very attentive and the best part of our visit. We ordered a house margarita which was good and a diet Dr pepper which was good. I ordered a chicken quesadilla and my wife ordered the crab enchiladas. I really do hate to say this, because everyone has a bad night every now and then, but both dishes were terrible. The quesadilla was large, but the "chicken" was in the middle. So you got some chicken on first bite and that was kinda it. And the chicken was finely shredded and had a very strong char taste even though the quesadilla was not burnt. Finished part of one slice and that was it. The crab enchiladas were even worse...it was a pile of shredded brown stuff and tasted nothing like crab. She said the refried beans tasted greasy. And the rice wasn't very good either. She had one maybe two bites of everything and couldn't eat any more of it. We certainly wish them luck, but we won't be back and based on our experience couldn't recommend this restaurant. read more

This is our 3rd visit to this establishment. The previous 2 times were good, but unremarkable. This visit we felt merited a good review, as everything we ate was delicious and thoroughly enjoyable. We tried the $1.99 margaritas, that were prepared WITHOUT a mix, and you could tell that they fresh squeezed the limes. Oh so refreshing! The Chicken Mole Enchiladas were delectable and so was my husband's Carnitas Platter. Literally everything was amazing this afternoon. We will definitely be returning. BTW... Our server, Carlos, was extremely efficient and friendly. He did an excellent job seeing to it that we had everything we needed, and that we enjoyed our food. read more

I eat here often. I usually order the special, like last night, 3 enchiladas, rice/beans 7.99. I've had their tacos, burritos, tostados, grilled chicken breasts on rice, nachos, quite a few things on the menu, plus fried ice cream. I've also had more than a couple margaritas. haha. The food is tasty, and chips and salsa are always full. I like their salsa, not too hot. The interior is bright, with yellow walls and paintings. The service is always good. Last year I happened to visit on Cinco Demayo and there was a Mariachi band. (Had to google the word to spell it right). I am usually in and out within 45 minutes. read more

I'm stuck between 3-4 stars. Food was a bit bland, but not a bad experience either. I was pleasantly surprised at how large this place was in a strip mall location. The restaurant was bright and colorful, the staff were all friendly and helpful. I ordered the special of the day #20- 1 enchilada and 1 burrito with rice and beans. It was pretty good. I think the beef burrito had more flavor than the chicken enchilada. All in all I'd say they needed a bit more flavor or spice to everything. The salsa was decent so I put it on my enchilada and burrito. The portions are pretty large which was nice for $8-9 a plate. Nice place, good prices, just need lots of salsa. I went with a group of 4 people. Person one asked for a frozen margarita. They brought it out to them. It was very watered down and person one said she couldn't even taste any flavor. She told the waitress and they offered her a margarita on the rocks and person one said okay to it. Person one was pleased with that drink. We placed our food orders. We all receive our food. Person two and three receive their food, and there are things in their dishes that aren't in the descriptions of the dishes. (Which can make or break the decision to get dishes.) Person two sent their dish back to get it corrected. Person three said she would just eat around the extra items. I got my dinner and was extremely excited about it. I got the chorizo and eggs dinner. I received my dinner and started eating. I got probably 3 spoonfuls in until on the 4th bite I ate a piece of plastic.... We got the staff over and all they said was let me see it could be from the chorizo. And they got me a new plate. read more

We have eaten here several times and the food is always pretty good with good drinks. But it is a popular place and so sometimes loud and crowded. But I wanted to review something different. We have ordered carry out from here on several occasions this summer and they do an excellent job with their carry out orders. Various combinations and even an order of fajitas all came back well plated and packaged securely for the trip. Chips and salsa included. Combination plates are served on a sort of heavy sturdy cardboard platter covered in foil both on the plate and over the food to keep hot. Well thought out and all of the goodness from the restaurant at home. I recommend you try it sometime when you just don't want to get out but want good TexMex to eat. read more

The queso was missing some pizzaz, it was very runny, had nothing mixed in with it. I got the enchilada and chimichanga plate. It's massive. Gary ordered the enchilada rancheros. Both were good. Food arrived hot and tasted great. Service was okay. It took awhile for us to be greeted after we were seated and to order. Nothing wowed us, but overall it was good. We ordered carry-out and had a really good experience. They were quick to pick up the phone and very pleasant while ordering. I had the camarones a diablo which was excellent - a bit spicy (not so much that you didn't also get the flavor of the dish) and very tasty. My husband had the fish tacos which he thought were on the average side - he doesn't like avocados and each had a large slice (I got to eat the avocados which were fresh and tasty to me!); he thought the sauce was so-so as well. Placed our order at 6:20 for Doordash delivery. Our driver finally had to ask because there were orders waiting with no names or pickup information. After hearing from the Doordash driver I tried to call the restaurant to cancel our order but the phone kept going to voicemail. Our order finally arrived at 9:20. It's probably the best on blue springs but that's not saying much. I've been looking for a place that grills steak for fajitas fresh to order..it's not here in blue springs. That being said. Some of the best Tex Mex I've had! I was taken aback by the service here, especially for a Mexican restaurant. Our primary server was great, but many others stopped in to help fill drinks, clear the table, refill salsa, etc. Impressive! I got the Cancun plate and it was beyond good! I'm leaving a review of 1 star because Yelp makes you select at least one, but I wish I could leave a review of -10 stars. Probably the worst service I've ever had at a restaurant, and I'm pretty sure it was the manager who was waiting our table. It's shocking this place can stay in business. We ordered frozen margaritas and he brought us margaritas on the rocks. We asked for water, and he brought us straws but no water...I'm not kidding. We had to flag down one of the bus boys to get us water because our waiter (the manager) never returned to our table, not even after our meals were served. Instead he stood behind the bar cutting up with kitchen workers and sat in a booth with some other customers acting like a big shot. And our meals were so-so at best. Nobody goes to a restaurant to eat "so-so at best". Even worse than the terrible service was the pathetic salsa. If you're a Mexican restaurant and you can't make good salsa, just close the doors and go to work at Taco Bell (at least their Diablo sauce is halfway decent). The final straw was when we waited 10 minutes for our check and ended up going to the register and asking to pay. A bus boy rang us up with someone else's ticket because he couldn't figure out the cash register system and how to find our ticket. read more

On Valentine's Day, we ordered takeout and I cannot say enough good things about it! My husband enjoyed his burrito and was impressed with the chipotle sauce while I fell head over heels in love with the queso blanco (add chorizo for $2, you won't regret it). I also had the carne asada tacos; they were delicious but the tortillas fell apart, probably from the moisture of the takeout container. I had to break out a fork, but it was still amazing. Friendly people and fast service! The margaritas, chips, salsa and white cheese dip were standard to good. Between us, we tried the Mexican pizza, beef chimichanga and beef enchilada. The big drawback for us was the seasoning on the ground beef. We prefer a dry seasoning as opposed to the wet, red seasoning that was in the dishes we ate.
