It's filling and abundant, but it's a true country buffet experience: hearty, salty, and rich rather than refined. I got the shrimp and crab gumbo, which is classic Louisiana gumbo and it was outstanding! The sampler also had a bowl of crawfish etouffee which was good but felt it needed a bit more etoufee to mix with the rice.
