Location: La Concepcion is perched on Cerro Concepcion, one of Valparaiso's signature hills. The outdoor dining area overlooks the Valparaiso's port and the Pacific Ocean. Food: Easily on par with some of the best restaurants in NYC. First off, the complimentary whole-grain bread they serve is delicious. Our first night, I had the squash soup to start which was outstanding, with a really nice depth of flavor. I followed that with the Crab ravioli which certainly lived up to the hype! Each ravioli encases an impressive amount of crab meat and the accompanying cream sauce makes for a truly divine main. My second night, I started with the ceviche and followed with the braised beef with pumpkin gnocchi, which were both very good, although out of everything I ordered, the crab ravioli reigned supreme. Drinks: I had a Manhattan each night, which was well-made. The bottle of Chilean Cabernet Sauvignon we ordered to accompany our meal had nice depth of flavor and went well with beef. Service: Top-notch. Waitstaff did a great job making sure our needs were attended to and provided helpful recommendations. Overall: A must when in Valparaiso!

Italian is widely available in Chile and overused in descriptions, I would call this Italian fusion at best; my colleague is from Chile and suggested Peruvian this is where we went, so this Italian title is not 100% accurate, more like 25% since one special out of 4 was pasta based.

We had a busy day exploring Valpo and Vina del Mar, and we simply wanted to spend our last hour in Chile drinking pisco sour. Stumbling upon SaborColor was such a wonderful coincidence. The restaurant is located a little bit up the hill in Cerro Concepcion in beautifully renovated house. The ambiance is warm and woody, the walls decorated with quite impressive paintings for sale, jazz music playing in the background. The most important thing, they make pisco sours, all kind of them. Our cocktails were the best we had in Chile. I started with the classical one and switched to the ginger version, both were so well balanced and subtle. Our daughter had salmon, which was very fresh and perfectly cooked. We ate early (by Chilean standards), so I can't testify to what the scene or service are like when it's busier.
