This was the highlight of my vacation in Puerto Rico. With every bite, I felt my soul leave my body and travel to a dimension of succulent flavor. I've never had this experience with food before. Each layer of this dessert is a step upwards on the stairway to heaven. You begin with the cold sweet vanilla ice cream on top, followed by the crunchy surface of the carrot cake topped with walnuts, into the moist warm body of the cake itself....my eyes rolled to the back of my head as I left this plane of existence into a world where there is only Carrot Crack Cake.
