I usually come here just to pick up marinated Fajita meat because it's soo good. Per pound it is 11.19 which isn't super expensive but I think could be better. I do wish there was more English speakers here as the second time I visited , I needed an interpreter. The store is very clean and they have a variety of products and produce to purchase. I love shopping here and the experience is usually pleasant.

This isn't some small part time operation, it's a highly organized profession plant. I have friends that fight over getting their sausage and salami when I share. They are diligent about how roast etc. are butchered. The smokers are industrial custom made in Germany. Someone complained about the smoked links casing being tough . Don't grill just simmer in water they are very flavorful.

All the meat we had processed with Kuby's was cooked. We ordered bratwurst, spicy breakfast links, hunters stick, smoked link, and a venison salami (jalapeño/cheese), it's all shamefully delicious! Everything comes in large bags that has colored twisty ties. Those ties tell you what you have in the bag. Anyhoo, We got some incredible meats. I'm using my Cabala's commercial grade sealer to seal 50 plus lbs of processed food. I think this will be an all nighter to seal it all. 2017/37

These folks know their way around meat. I grew up in the heart of Amish and Mennonite country in Kansas. Butchers and smokers of meat down through the years, you could always get quality cuts of meat and sausages from cattle that never saw a feed lot and pigs from optimal conditions. Years ago when I moved to Dallas, I found Rudolph's Meat Market in Deep Ellum right away to get cuts of meat for special occasions as well as Kuby's and other purveyors for quality meats. American Butchers is a collective of Nebraska ranching and farming families that is marketing their Artisan meat here at the Farmer's Market and I can tell you their meat is beautiful. Half and quarter cows are brought here to Dallas and can be butchered to your specifications; but what they have in their cases is wonderful. All of the meat looks perfect. They had cooked some samples of flank that were soooo tender. We bought some Jalapeño Cheddar Summer Sausage for $9.99/pound that was lean but delicious. You could see the diced Jalapeño in it and chunks of cheddar cheese. We also brought home a lean black pepper salami that was equally as good. We'll be back to shop some more. I was very impressed both with the meat and their professional and knowledgeable service.
