    As the previous reviewer stated this is THE place to get your game processed. You can find other processors in and around the metroplex that are cheaper but from my experience none that are better or offer more variety of sausage. Besides sausage Kuby's will cut steaks, filets, and just about any cut that you would like as well as offering tenderizing. They also does a great job of making ground venison/elk, etc with the option of adding 5% beef fat or not. All of the sausage is pre-cooked except the breakfast sausage and the Italian Sausage. The standouts for me are the Bratwurst (Go figure them being German), The Hunter Sticks, and the Jalapeno / Cheese Salami. Kuby's does do jerkey however don't expect typical thin type beef jerkey... this is really thick and slightly peppered. I have taken many different types of game and have never had an issue. The only thing that comes to mind as a minus is that they used to offer tamales as an option (deer season only) however as of this year it is no longer offered.

    Only place to get your ducks processed, sausage is delicious and they're not overpriced

While there, I asked the cashier what two sandwiches we should try: ***** Brisket Hoagie ($11): Comes with pimento cheese, candied jalapenos, with locally sourced brisket. Crispy, meaty, cheesy -- you'll Oprah clap your hands together and say, "Yes. YES!" Try this. REUBEN ($11): This marbled rye, Russian dressing, swiss, pickled onions, brisket pastrami masterpiece danced better on my tongue than their Brisket Hoagie, honestly. Perhaps my favorite Reuben of all time. In terms of safety, they... - Do wear masks inside, but could do a better job keeping them on around each other. - Offer plenty of space in the back patio with picnic tables (plenty of distance between each one). We have a new addition in American Butchers at the Dallas Farmer's Market. These folks know their way around meat. I grew up in the heart of Amish and Mennonite country in Kansas. Butchers and smokers of meat down through the years, you could always get quality cuts of meat and sausages from cattle that never saw a feed lot and pigs from optimal conditions. Years ago when I moved to Dallas, I found Rudolph's Meat Market in Deep Ellum right away to get cuts of meat for special occasions as well as Kuby's and other purveyors for quality meats. American Butchers is a collective of Nebraska ranching and farming families that is marketing their Artisan meat here at the Farmer's Market and I can tell you their meat is beautiful. Half and quarter cows are brought here to Dallas and can be butchered to your specifications; but what they have in their cases is wonderful. All of the meat looks perfect. They had cooked some samples of flank that were soooo tender. We bought some Jalapeño Cheddar Summer Sausage for $9.99/pound that was lean but delicious. You could see the diced Jalapeño in it and chunks of cheddar cheese. We also brought home a lean black pepper salami that was equally as good. We'll be back to shop some more. I was very impressed both with the meat and their professional and knowledgeable service.
