For over 35 years I've used Kuby's. I even used to air express frozen meat to them when I was out of state. David has created a unique computer program that assures the butchers get accurate instructions and are able to track your order. You get the animal you take in . This isn't some small part time operation, it's a highly organized profession plant. I have friends that fight over getting their sausage and salami when I share. They are diligent about how roast etc. are butchered. The smokers are industrial custom made in Germany. Someone complained about the smoked links casing being tough . Don't grill just simmer in water they are very flavorful. read more

My son shot a deer and had it processed here. What an amazing place to have your game meat processed. Really happy with what they offer. They have the discipline of the food down to a science. Kuby's was established in 1961. After nearly 60 years in business they have perfected the process. All the meat we had processed with Kuby's was cooked. We ordered bratwurst, spicy breakfast links, hunters stick, smoked link, and a venison salami (jalapeño/cheese), it's all shamefully delicious! Everything comes in large bags that has colored twisty ties. Those ties tell you what you have in the bag. Anyhoo, We got some incredible meats. I keep bringing every hog I shoot here and have never been disappointed. I highly recommend getting game meat processed here especially hog meat. Get the jalapeño cheddar sausages made. I have never brought a whole animal here, only deboned meat so I am not sure how they do with that. read more

As the previous reviewer stated this is THE place to get your game processed. You can find other processors in and around the metroplex that are cheaper but from my experience none that are better or offer more variety of sausage. Besides sausage Kuby's will cut steaks, filets, and just about any cut that you would like as well as offering tenderizing. They also does a great job of making ground venison/elk, etc with the option of adding 5% beef fat or not. All of the sausage is pre-cooked except the breakfast sausage and the Italian Sausage. The standouts for me are the Bratwurst (Go figure them being German), The Hunter Sticks, and the Jalapeno / Cheese Salami. Kuby's does do jerkey however don't expect typical thin type beef jerkey... this is really thick and slightly peppered. I have taken many different types of game and have never had an issue. The only thing that comes to mind as a minus is that they used to offer tamales as an option (deer season only) however as of this year it is no longer offered. read more

I dropped a ram off here to make sausage and had 2 types made hot link and chipotle pepper jack. The wait time was expected about 2 weeks which Isn't bad being the holiday season and in Dallas. I had my brother pick up the sausage for me because I was out of town and when I came how to see it I was in COMPLETE shock. It was 2 plastic bags filled with the sausage I had ordered only it was sealed by a twist tie, are you freaking serious?! The sausage link were all frozen together in one big ball and was covered in frost!! I don't understand how they do not vacuum seal the sausages like every processor I have been too in the past, but just carelessly throw it all in a bag and in toss it in a freezer. That is just some incredibly lazy and corner cutting effort if you ask me. I had to partially thaw it out and separate each of the paired links in ziplock bags because I do not have a vacuum sealer, I depend on the good processors to have it already done. I will definitely not be using these guys, it sucks because they are the only game processor in Dallas. The sad part is I'm sure their business is always booming due to their location but I definitely won't ever recommend this place to anyone. read more

IMO, this is hands down the best spot I have ever been to for game processing. Their venison and pork sausages, respectively, stand up to ANY in the city. Rudolph's is an admirable 2nd place, but you hands-down cannot beat Kuby's. Truly the best. read more

We chose to go with the venison butterfly fillets, venison cutlets, and jalapeño cheddar salami. Best venison our family had ever tasted. We had them tenderize it and it was definitely tenderized perfectly. When I received it wrapped in butcher paper and it was very clean with no blood and looked excellent. I cannot reiterate enough about how impressed I was with how it was packaged and how good it tasted. I will be bringing in all my wild game to be processed here. Customer for life. I took a lot of wild hog meat here. Our first time experience hunting hog as well as taking to a meat processor. Our guide way out in Centerville, TX recommended Kuby's, and we're glad they did! David, Justin, Johnathan, and Alex were so kind and patient, as I asked many questions. Justin even stayed after his day was over to explain what I needed to know to get the best processing and the meat fixed the way I wanted! That sure made an impression! 13 days later, my order was ready to pick up, and the guys loaded my big order into my car. The Fajita sausage was very good. Our favorites were the Regular Hot (Not really hot at all, but lots of flavor!) Summer Sausage, the Jalapeño Cheese Summer Sausage, and the hog bacon! WOW! Can't wait to try the breakfast sausage. We're using a ham they cut up for Thanksgiving. The place was very clean, the guys were friendly and knew what they were doing. The prices are fair, compared to others I've checked, and I will certainly recommend them to my friends and clients. A+ read more

this is my first deer season living in dallas and i typically kill 3 deer every year and dont buy any other meat. i need a reliable processer that will take care of my meat. i took 3 deer in and got 25 lbs of smoke sausage in 3 flavors, regular ground and bacon ground. pros- fast turn around, they weigh your meat when you get there. cons- they mixed up my bacon ground and regular ground, very dissapointed with the smoke sausage from kubys. mild regular smoke is bland and the tough casing makes it not that appetizing. also they only had my deer for 2 weeks and when they gave me the sausage it was in loose plastic bags and covered in frost. makes me feel like it was very old and had freezer burn. not sure if I will use therm again. read more

I just picked up a little over 100lbs of venison I dropped off for processing. I got some ground, breakfast sausage, hunters sticks, cheese/jalapeno sausage, plus a box full of roasts and ribs. I tried a hunters stick first, then another, then another, then took some of the one I gave to my daughter back and finished that one. I broke into the cheese/jalapeno sausage next, some of the best I've EVER had. This place is great, when I run out of meats I'll head to their restaurant and store. read more

You can't beat the flavors and varieties of suasages offerred. Their venison breakfast sausage and chorizo are hands-down the best I've ever had. BUT - they are still in the stone ages when it comes to packaging - they do not offer vacuum packing, and the link sausages come "bulk" in 5-lb bags. Who wants to get home and have to immediately re-package all of their meat? The salami dries out in a few months if not vacuum-sealed or wrapped in butcher paper. Their hamburger meat and breakfast sausages come frozen in 1.5 lb bags - not really a convenient size since most recipies call for one pound quantities. Several of my friends have been repeatedly shorted this year on their meat by up to 25% that Kuby's called "waste" - bloodshot or dirty meat. Interesting because the fresh kill went straight to a gambrel, was skinned, gutted, washed, quartered, and then transferred directly to an ice chest. (I for one have not had this problem because I debone all of my meat myself at home and then take them the boneless meat - that way there is no question of how much meat that I took in.) This has only occured beginning at the very end of last year and this year on multiple occaisions with my friends, and I have had Kuby's process my meat for the past 25 years. Not saying that they may have an internal "skimming" problem, but it does raise the question. I have not seen a review on here less than a year old, but I am curious as to how many others have noticed this abrupt departure from previous experiences. Once again, the flavor and variety can't be beat - but that can only carry someone so far. Kuby's needs to do some self-examination and see what they can do to get their house in better order. read more

VERY UNSATISFIED . Asked for as many steaks as possible from large, beautiful elk cow, a few roasts, and ribs, and remainder of meat as sausage and salami. From over 220 plus lbs of elk, already quartered and delivered to Kubys, received thirteen small packages of "steaks", a few roasts, and ribs....the rest as sausage!!!!!! They completely ruined the order. WHERE DID THE MEAT GO? When I pointed out the mistake they tried to claim it was my fault. I used Kuby's last season for a couple of deer I harvested per many people's recommendation. Here are the pros: sausage is pretty good, the salami is fantastic, their ground is packaged tight and in perfect sizes (approx 1.5lb each). The breakfast ground is awesome; links not so much. However there are cons: I was disappointed they do not vacuum pack your food (except the ground) I had to do it myself. I have also read and have a very good feeling this is true - they mix your meat with other peoples. Proof may be that I finally got to one of my back strap packages and the stamp on it was from 2016! Others were stamped with 2018. Needless to say, I won't be eating it and it's wasted now. They are pretty pricy, and due to my experience, unfort I will not use them this year. read more

I have been using Kubys to process my venison and hogs for over 20 years. I have heard many people tell me that I had to try their venny sausage as it is the best ever. Each time...not even close to Kuby's quality. Love the Jal/Cheese, Brats and Salami. My son grew up on Meat Stix as his best source of protein. You pay for quality....but you will not go wrong here!
