Because I was Introduced to TriTips in central CA, I expected the marinade to be more like a Santa Rosa Rub, which is how I cook them. It was not, but it was very good and tender. I grilled it on a gas grill at 350 over indirect heat til internal temp of 100, then flipped it over to direct heat (flipping once) til a bit over 130 (10-15 min). Removed from heat and tented under foil for 10-25 min while I steamed asparagus. It was perfect! Very good and lots of juice! There were med well pieces for my husband, and rare for me. Thank you! Btw I ordered 40 oysters. Somehow this was all my fault. When I questioned the situation, I was told I would no longer be served. The issue wasn't the product itself. It was the lack of communication, professionalism, and respect for a longtime customer. Based on my experience, I can no longer recommend this business and will be taking my business elsewhere. When someone shows you who they are, believe them the first time.
