The ramen was fine but rather bland, but I was surprised at the contents, too many noodles, too little protein, a distinct lack of vegetables. I stumbled upon this place by accident yesterday, and I'm so glad I did. I've been searching for a Japanese ramen shop that serves a clear tonkotsu broth, and this place absolutely nailed it. They offer three versions of their tonkotsu ramen--Clear, Black, and Spicy. Of course, I ordered the Clear. Oh my goodness... this was exactly the ramen I'd been looking for. The broth was crystal clear yet incredibly rich and flavorful without being heavy. The chashu was melt-in-your-mouth tender, perfectly seasoned, and not greasy at all. The soft-boiled egg was cooked to perfection with a beautifully jammy yolk. The noodles reminded me of the ramen I had in Japan--simple, authentic, with the perfect texture and firmness. And the shredded green onions on top completely brought the whole bowl together. They added just the right amount of freshness and crunch. Game over. More staff that are so happy and helpful with recommendations. You can tell they really like working here, the food and the owners. The menu has more of my favorites and a few new ones. The Yuzo Chicken is amazing . I highly recommend it. This is the most authentic Japanese food I've had since I came back from my trip to Kyoto. I will definitely be coming back for my ramen fix. The place is clean, cheerful and played out well for couple, families and the bar is a cool place to eat solo too. What a nice group of upgrades! So happy. Went for a late night dinner with some coworkers. The black ramen broth was very rich and garlicky, some may say too rich and oily, but if that's your usually go to for tonkotsu ramen, go for it! The clear tonkotsu ramen hit my ramen craving with warmth on a chilly fall night. The noodles are on the softer side. Side egg was made well. Sometimes ramen isn't a one size fits all but I love the location, easy parking right next to it. Bincho doesn't take reservations so it can get crowded and wait times may be long. I love their variety of basque cheesecake, even though on the smaller scale for dessert, it was a nice treat after the rich ramen flavors. Definitely want to come back to try other menu items. My boyfriend and I have seen the signage a couple of times while driving in the area and decide to give it a try last night! The servers and weight staff were super sweet really accommodating and kept checking in with us to see if we needed anything more or if we like the food or if we had any questions. The food tasted really fresh not too heavy. It was a very straightforward menu which we both appreciated. I'm really happy that my Ramen did come out as I imaged, you could smell the Yuzu from the broth. I did wish though it had a little bit more flavoring, but overall was pretty good. The location itself is in a shopping plaza inside. It was really calm pretty quiet. They have bar seating and a couple of tables throughout the area, but it's not a big restaurant which I like.! Oh my goodness, Bincho creates the most flavorful bowl of ramen in the SFV, hands down! I came by for take out today close to the opening at 5PM, and they were already lit with customers! Despite even that, I was helped immediately and was heading out with my order for 2 bowls in about 15 minutes. I was also offered a glass of ice water while I waited, which was very kind. Every aspect from the dark walls and wooden bar, down to the music and bathroom is well thought out. You can tell they truly value their space and the customers that support the restaurant. Don't get me started on the food ~ We tried the Bincho Egg Black Tonkatsu Ramen. The broth was silky and creamy, not oily or heavy at all. The black garlic added a very interesting earthy and almost scorched taste to it. The egg was sweet, and I've never had a sweet ramen egg before but it went well with the rest of the umami flavors in the dish. The green onions and wood ear mushrooms had a fresh crunch to them and there was enough to get a good amount in every bite. The charsiu was tender + savory sweet, kinda tasted like cheese to me but that's also a positive lol! The noodles were slightly chewy and the portion was just right for the amount of broth you get. I have nothing bad to say about this ramen, it's truly one of those spots where your heart desires seconds or even thirds lowkey. I'll be back again to try a different option on the menu. I was craving some good ramen and luckily was told about this spot. There are not a lot of good ramen places in the valley but this place is literally the best! Located inside a small shopping plaza, the place itself is that not big inside. But we went on a Sunday evening and it wasn't busy so we were seated right away. The menu offered lots of different ramen options, both spicy and not spicy. They also have appetizers and desserts. I got a Thai tea and it was very very good. They brew the tea in house so you could tell it was fresh. And it wasn't overpowering in sweetness. Now onto the ramen 5/5!!! I got the spicy tonkatsu ramen and it was perfection. I was so excited to check out this place and it exceeded my expectations! Our waitresses were so helpful with their recommendations. Highly recommend their Spicy Tonkatsu with Tamago--this broth is so garlicky and full of richness. The Yuzu Jidori Chicken Ramen with Tamago has a very light broth and is refreshing. We also tried their Yaki Mayo Cha-Siu bowl and instantly fell in love...the generous portion of cha-siu and their addictive sauce all over the rice is perfection. Their ramen is unreal. As a pescatarian I usually end up being pushed to order vegan ramen, which usually ends up being pretty bland, but their vegan option is really special, and the veggies they put in are really fresh and delicious. This spot was on the list of top ramen spots in LA and the only spot from the valley so had to try it! Service was so welcoming and inviting from the start. It Was these two girls and they were so cheery and funny. We came on a rainy Saturday around 4:15pm and it was pretty full but we sat at the bar and there was plenty of room there and it was clean. We ordered the gyoza which I was going to get anyways but then one of the girls recommended it so for sure we had to get it. Then we got the Cha Siu which was my first time trying that and that was delicious! I'd order that again. The gyoza was a bigger size than what it usually is and it was so hot. It was nice and filled up with pork. I got the Black Garlic ramen and the broth was delish but I mixed it up more because half of it was full of black garlic. My sister got the Spicy Tonkotsu Ramen and it was packed with flavor with medium spice. Everything was delicious! There is enough parking but a lot of the spots are taken for other businesses so they're mostly by the Goodwill parking. read more

The spicy chicken karaage had good flavor but wish it came with a lemon wedge or sauce. I'd like to try the clear broth next time as the creamy broths were a bit too rich for me! With the lunch special you can get a side of karaage or gyoza and both are great options. The gyoza is pretty big! Lots of yummy filling inside. Just a couple of months ago, the chef was also the owner of the restaurant, and the food was fantastic -- especially the soups and the perfectly crispy gyoza. That was one of the main reasons I and my friends kept coming back. I came back today because I was recovering from a stomach illness and thought a bowl of ramen would be something comforting and easy to eat. Unfortunately, the ramen was extremely greasy, and the gyoza was just as oily. It honestly felt like everything was being cooked with an excessive amount of oil. We really hope to see the chef back again. His cooking was a distinctive part of what made this place special, and there was a noticeable difference in the food. As always, the service and the waitstaff were excellent. I really wanted to give 5 stars, but based on my most recent visit, I can't. I'm giving 4 stars mainly because I still have great memories of how good the food used to be. I sincerely hope the kitchen goes back to preparing the food the way it used to. Bincho Ramen is Top Iron Chef level Japanese ramen! TONKOTSU (NOT tonKATSU) ramen is the specialty here, but their "standout" ramen in my opinion is: the Clear Pork Tonkotsu Ramen. It is stellar! You don't eat pork? Try the Yuzu Chicken Ramen. A speciality that's hard to find at most ramen shops. And of course Bincho Ramen has a vegetarian ramen on standby for non-meat eaters. Gyoza in Japan goes hand in hand with ramen orders. I personally always order gyoza at a ramen shop. Bincho makes gyoza fresh in-house from scratch and it is the best that I have tried in Los Angeles. What they don't make in-house are the ramen NOODLES;however, Bincho sources from artisan ramen noodles makers that supply to top ramen joints in LA. Everything here is flawless, from ramen broth to noodles to toppings. Their Pork Chashu and jammy Ramen Eggs (Ajitsuke Tamago) are outstanding! Labor of love for ramen is apparent from the chef/owner. The chef/owner (Toshiro-san) is so nice and sincere. If time allows, he will come out of the kitchen to say hello and check if everything is okay. I learned that he was a chef at the well-known LA branch of Tsujita Ramen House before starting up his own restaurant. He does his own take on ramen and it is beyond good! After two weeks we are back at Bincho to try a few different dishes. The spicy tonkatsu was rich, flavorful and had a nice kick. I like it better than the black tonkatsu we had last time. The clear tonkatsu while lighter, tasted clean and smooth. The aburi chashu bowl was smoky and charred, which amplified the taste of the chashu. Also enjoyed the spicy karaage. I was sick of ramen after having it almost weekly back in the 2010s when it became a big thing here in LA But Bincho renewed my love of Japanese ramen. The parking is pretty easy, free shared lot with other businesses Service is attentive but not overbearing, they greet you right away and the girls are so sweet. The owner/chef is a soft spoken Japanese native who wants to listen to customer feedback and he'll come out and greet ppl sometimes which is cool I've had the yuzu chicken which is nice and refreshing from that citrus, I PERSONALLY would love a little more yuzu flavor but I love citrus flavor My favorite so far is the clear tonkotsu. Flavors of pork but not milky and as heavy tasting. And I still don't get how ramen places get their eggs so good, perfectly seasoned and jammy, and Bincho is no exception.
