Kinda sad to see experiences have been hit-or-miss. Not a lot of places offer beignets outside specific regions, so I'm all for it here! I've been maybe 3-4 times and so far it's been a super chill cafe experience here. Beignets and dipping sauces, along with some drink options, are more than enough for me. I will say they're a little denser than say Cafe Du Monde in NOLA, but overall feel pretty representative. Maybe timing when you go is super important. I've only gone early-mid mornings on the weekend and everything I've had tasted super fresh, but some of the other experiences I'm reading feel like what happens when I reheat some older ones I kept in the fridge. Located in a small little business park you'll find some of the best beignets in northern Virginia. Entering it has a farmhouse coffee house vibe with a creamer bar off to the side. Heading to the counter the staff is very nice and very quick with their service. I got a late and some beignets to go. They are so delicious fresh and even good the next day. I'll be honest and have never had beignets from New Orleans but if they're like these then I'll be happy to try them. read more

Disappointing! Beignets were cold! They obviously pre-fried their beignets. If they will charge 6 pcs for $10, the least that they can do is serve them fresh. Overcharged coffee! Don't be fooled by their version of $5.00 "cafe au lait". I've had cafe au lait from different cafes (including France and New Orleans). This place did not serve me cafe au lait. They served me drip coffee with milk. Starbucks only charges $2.95 for their grande drip coffee. Will never go back to this place. read more

The beignet is in between airy and doughy. Slider- would get it without the powdered sugar because it already has syrup/honey in it. Good to try once but I wouldn't get again Pomegranate tapioca syrup is just for a limited time so we tried that. Came in one day wanting to have a quick lunch. They weren't offering sandwiches at the time because they didn't have something they needed. I forgot what they were missing. I ended up grabbing a couple beignets to take home instead. When it's warm and fresh, the beignets are really good. Not too sweet or too doughy. I think they were priced okay. The shop was empty when I came in, but a couple people came in a few minutes later. The shop is really cozy and clean. they have the cutest decorations. If there are a lot of people stopping by, I think it can get crowded really easily. They have a lot of people who come for a quick take away though. Service was good. Beignets were good. I've been wanting to try the "beignets" for quite some time, however they're only open 3 days per week with very limited hours. So, it's been a challenge. We ordered a flight of beignets with strawberry, hot honey and chocolate. The beignets were nothing special. They were chewy and hollow. The strawberry sauce was delicious, however the chocolate sauce needed a quick zap of heat to make it dip-able or spreadable. I've had many beignets in NOLA and around the country and these were definitely not a beignets. I read somewhere they're supposed to be a combo of Malassadas and beignets, however they're more like the consistency of day old Malassadas. Their homemade sodas consist of Pellegrino and syrup that just tastes like straight corn syrup. Another disappointment. The cafe at lait was good. :) Overall, even though this place is very close to me, I will not return. I'm actually surprised by all the positive reviews. read more

Stopped by this weekend after hearing good things about Bilstad's and I was super excited--especially since I love supporting local businesses. We ordered a sandwich (I don't remember the name, but it was essentially a BLT), and a 3-pack of beignets with Apple Butter. Honestly, I was pretty disappointed. For a place with "beignet" in the name, I thought that they would be made fresh. I understand that that's not the most time-efficient for a business, but having ready-made beignets means that they really weren't super fresh or crispy. As for the sandwich, it was good, but we really came here for the beignets. The apple butter was good too, but I think I would've maybe preferred the chocolate or the jam. As much as I love supporting local businesses, since this is a 20 minute drive from my house, I'm not sure that it's worth returning to unless they start making their beignets to order. read more

Tried a beignet a few times at family gatherings but I've never been to the shop and grabbed anything for myself so we made a late morning trip over. It wasn't really busy on the Sunday morning we visited so there was plenty of parking. The interior is a little small but nicely decorated. Staff looked a little busy but were friendly. We ordered 6 beignets with 3 dippers (chocolate, apple butter, and (I think) strawberry), a Gumbo'd Shrimp bowl of grits, and a grilled peach iced tea. Only took about 5 minutes to put everything together and we were out. The food traveled well. The beignets were light and fluffy and the dippers were really good. My favorite might be the strawberry (or whatever the pinkish one was). It was definitely a lot sweeter than other beignets I've had because it was both glazed and covered in powdered sugar. I think they would've been perfect without the glaze. The grit bowl was good. Shrimp were kind of small but there were a lot of them. Flavor was tangy. The tea was decent but not much peach flavor. It tasted like the sweetness all came from the peach slices that were put in the cup. Overall, a solid experience. Good customer service and the food is pretty solid. I would come back if I'm looking for something sweet to eat. read more

MUST COME HERE!!! This place is so awesome!!! The beignets are so delicious and the owner is so personable and sweet. We got a flight of the 6 beignets with chocolate, caramel, and apple butter dipping sauce. They were all so rich and delicious. It was so much more than I could've expected. The restaurant is so adorable inside. Has plenty of seating and the most adorable decorations with photos of the owner's family enjoying his beignets! So heartwarming. I am so beyond impressed! We stopped by this cafe shop in a small strip mall off of Ashburn rd for coffee. They do not have any alternative milk like almond or coconut milk, and their oat milk is not gluten free. The service is good and friendly, having said that we're unlikely to return. read more

These beignets are awesome! Small, cozy restaurant with an open kitchen concept. The workers were so nice. I think the owner was out there walking around and telling everyone about the new hours. It's now 7am to 2pm. The beignets were made with such fluffiness. It was not dry at all! It appears that they might rotate their dipping sauces. I got the chocolate, strawberry, and apple butter. I'm personally not a big fan of chocolate, however, it was still good! But my favorite was the strawberry, for sure. The menu is quite small, which kind of makes sense. I've been wanting to try Bilstads and I'm so glad I did! They have a small sitting area inside the store. It wasn't busy when I went on a Friday for lunch, but I'm sure it does get busier on the weekends. I had the smoked beef tri tip, I thought it was good but nothing to rave about. I wish there was more beef, but the bread is delicious and it is a pretty large sandwich that can make for two meals. The beignets were so good. They were fluffy, soft, and light. It wasn't overly sweet with the powdered sugar. The dips add just the perfect amount of sweetness. I had the caramel, apple butter, & strawberry dips. I thought they were all really good! If you liked fried dough balls this is the place for you! I've not had many beignets in my life so I can't say if these are authentic or not. My Louisiana uncle thinks they are the best in the area. They don't remind me of the ones I had in Louisiana which are more fluffy or the ones at the Arlington place which are similar to those. However apparently they are the shizzle bc the people in there I am not kidding told us they sometimes come twice a day. Prices are reasonable and lots of sauces. Pillowy soft and fluffy beignets showered in powdered sugar are served up fresh and hot. They are a good size but so delicious it's hard to stop! I ordered 6 to share with my daughter and we both agreed we could have easily eaten all 6. They offer a variety of dipping sauces that varies daily. We opted for just the chocolate but they will let you try the full "flight" if you want. The chocolate was delicious, thick and fudgey like a ganache. This traveling pop up has grown into a small shop in the middle of Ashburn. Their beignets are cakey and fresh drenched in lots of powdered sugar. We chose the 6 pack with an apple dipping sauce. Word of advice if they offer you a small tray to eat on, please take it. We didn't and we found ourselves with flakes of sugar on our person. Staff is friendly and food is fresh. They did a pop-up location in Franklin Farm, coordinated by our HOA. We used a sign-up genius to reserve our quantity, and once they hit 90 half-dozen orders, they closed the sign up. (And they did!) Pickup was a little unusual. I don't know if they have a food truck and it was at another location, or if they do the pickups in this manner always, but it was a hatchback car with a table set up in front of it. It had the store banner, a small sandwich sign that asked people to wear masks (Covid 2021), and stackable bread trays with pre-packaged half-dozens of beignets. I had thought for the hour-long pickup window that was scheduled, we would be getting warm out of the fryer beignets. I'm sure they were made that morning because they were fresh tasting, just not as fresh as I thought they'd be with what I thought was a food truck type operation. Each little bag of six ($8) were stapled closed with a business card attached with their business name, allergy notice, and reheating instructions. They are not classic New Orleans style powdered sugar beignets; they have a powdered sugar and ginger glaze to them. They were very tasty, but be sure when you reheat them (I used my convection toaster oven on 350 for 2-3 mins), use a warming tray because the glaze is very messy when heated and can get on the grates/heating element easily. All in all, a tasty treat and a fun pop-up in the neighborhood. Kudos to this niche small family-owned business. Hope they do well! read more

But the family loves the chocolate sauce. Coffee is delicious, piping hot and fresh. Having ordered from their pop up a couple of times, we've waited with bated breath for their brick and mortar to open. We finally were able to go this morning and could not have been more pleased. They're still in the "soft open" phase but you'd never know as service was smoooth and quick while the beignets and coffee were spot on. The beignets were fresh, hot, and wonderfully tasty. All three of the dipping sauces were delicious and generously portioned. So often you run out of the sauce halfway through a meal. Not here though. Beignets are synonymous with New Orleans and Cafe Du Monde. Bilstad's version are not a carbon copy of those but are a fresh, delicious take on the treat. A New Orleanian myself, their beignets hit the sweet spot between nostalgia something excitedly new. It's a cute shop with a few tables and a nice, friendly decor. Wanted to love these as we love Cafe du Monde and all things New Orleans. The place is super cute, staff very friendly, not crowded, easy order and check out. The actual Beignets are not authentic beignets unfortunately. They are rectangular glazed donuts. Very tasty for a glazed donuts but not the beignet experience you may recall from visiting the French Quarter. The dipping sauces are decent, caramel-bourbon being the best.
