This makes for a great taste of traditional Mexico, as taught to me by my late Uncle Ralph Grennay. Uncle Ralph could trace his ancestry back to Mexico, in the days (c1864) that the French supported Emperor Maximilian (an Austrian), and his efforts to overthrow the Republic under President Benito Juárez. Just the right amount of ingredients, including the white Mexican cheese which provided its own melty goodness to this handful of great flavor. The veggies added to the flavor and texture without appearing to be "filler" so the owner can skimp on the meat, like so many places do. The beef was very tasty and not overly seasoned, nor was it greasy. One of the best tacos I have had, in my remembering. I had to take the second taco home for later. I heated it, open-faced, in the microwave, which often destroys tacos. This rewarming was not bad, as microwave leftovers go, but eating the fresh taco, at the restaurant was definitely the preferred method. The staff presented a friendly atmosphere, and were very helpful. They brought us our order in good time, and it was correct the first time.
