There are a few rules when it comes to Texas barbecue. The biggest is "Get there early, or leave…read morehungry." I very rarely make that mistake, but when you have over a three-hour drive to get to a spot, balancing an early arrival with meaningful sleep is no easy task. I left before 9 am and through the lengthy drive, I got to B4 Barbecue a little before noon. B4 is a little different. It's not a food truck. It's not your typical brick and mortar. B4 is housed in Mabank Feed, next to plenty of Ariat products and horse food. I expect most places in Austin to have a line, but I didn't expect B4 to wrap around the entire feed store. As I sat there waiting to order, they were selling out fast. By 12:30, they were down to Texas Twinkies and their house sausage. I ordered one of each plus a side of their Mexican Street Corn (Elote to the ball knowers). The house sausage was very solid. It was extremely juicy and firm with great flavor. However, the star of the show was the Texas Twinkie. A jalapeño stuffed with brisket, wrapped in bacon, and smoked to perfection. It wasn't too spicy, but the jalapeño created a solid base while the brisket inside was shockingly creamy and soft like the inside of a Twinkie. The smoked bacon wrap added a final touch of flavor. It was super unique and incredible. I feel honored to even get to try it. As my only side, the Mexican Street Corn rocked and had a ton of flavor throughout. The bread served on the side was Texas toast that was buttery and crispy. A very welcome change from the typical white bread slices I normally have with my barbecue. For the travelers like me, if they have the stock, the $35 sampler will get you 1 slice of everything on their menu plus 1 side. Worth it if you're riding solo and need to try a little bit of this and that. They also sell boba which I wanted to order but completely forgot to ask for while I was there. I want to go back to B4. I need to go back to B4. If this small sample was a sign, this is another heavy hitter in the world of Texas barbecue. You just have to get there before 11 if you want to try it. They have plenty of seating inside to enjoy the delicious bbq. We tried the sampler platter and added a couple more sides. The brisket was tasty. The chicken was unique. Very flavorful with the mustard seasoning. The ribs melt in your mouth. The sausage was excellent. The burnt end wasn't our favorite (very sweet), but was tender and juicy. The Mexican corn was our favorite side. The cilantro like rice was ok. The mac and cheese was very cheesy and flavorful. Worth checking out when in the area.

They have two different kinds of sauce, ("If it's good bbq, you don't need sauce") I don't care for either of them so it's a good thing their bbq is good. We mostly stick to the brisket and ribs but we've had the pulled pork as well and it's good. Haven't found a bad side yet and we've tried a lot of them. They always have peach and/or blackberry cobbler and it looks amazing but I do not like either of those. However on Sunday they have apple cobbler and it is just as amazing as it looked. They have the old fashioned long hallway walk to the ordering section that I haven't really seen since I was a kid. It brings back a lot of memories for me. They have a decent sized dining area, and a huge dance area in the back that has a full service bar and picnic tables set up for eating. We normally go into the music hall to eat and don't eat in the dining area. There's a big stage and they have live music and free dance lessons once a week.

I imagine they are preferred more by locals simply because of the quality of food cooked on fewer days opened.

But it wasn't good, it was very tough, like it hadn't smoked for long at all. After my meal I went to the team leader who was cutting beef (she was in charge ). In a deliberate friendly way I said, "hey, can I give you a little feedback on the beef?" She looked at me and didn't even respond. I thought maybe she didn't hear me and I said, "excuse me but did you hear my question?" She nodded. So I let her know, and her entire acknowledgement was a head nod. No apology, nothing. I then wasn't mean but was direct, "listen, your food is expensive and you seem like you'd care about it". I've never met her before, she never knew me, no history. Definitely attitude, she needs coaching. Fortunately most of the Dickey's are not like this one.
