There are a plethora of butcher shops across Nashville, most of them quite good. But having tested them all, I believe Bare Bones to be the best! It's just another superior purveyor of food in The Nations, a Music City neighborhood, that has no shortage of sensational culinary experiences. I'm a gourmet home cook with a dozen professional chefs in my family, so I take food seriously. And I have to be on my A game to compete with them! I was experimenting with a crispy Szechuan-style pork belly a few years back, and I needed a two-pound pork belly with the skin still on. Bare Bones was the only butcher shop in town that would do it. Understandably, such a specialty order requires advanced notice, but they had that beautiful slab of meat waiting for me as promised. The resulting dish was of superb quality! This past week, I scoured Nashville for andouille sausage, something that is inexplicably difficult to find in this foodie paradise of a town. I guess we're just too far from Louisiana. Refusing to buy some pathetic store-bought packaged version, I wanted the real deal. Since Whole Foods stopped selling their impeccable house-made andouille about a year ago, the scavenger hunt was on! I must mention that Porter Road Butcher in East Nashville has a beautiful andouille sausage. But the andouille I bought from Bare Bones was noticeably better, turning out to be an otherworldly experience! My goodness! Searing a few slices of this heavenly andouille on both sides briefly yielded the most tender, flavorful, melt-in-your-mouth sausage I've eaten outside of Budapest and Poland! It is sheer perfection! The result was my newest successful experiment, a perfect-10 jambalaya that I made last night. It's so good that it would rival anything coming out of New Orleans, and the sausage from Bare Bones is what put it over the top! I came here on valentines day to pick up some lamb chops for my valentines day dinner. Unfortunately they were sold out but they had other lamb options available. The butchers were able to cut out lamb steaks from the piece that remained and that was enough for me. The quality of the meat was out of this world and you can taste it as you eat. One thing that I love about cooking with good ingredients is if something goes wrong, I can only blame my preparation and technique. I have to say, this place has good quality meat. read more

This is the best butcher shoot in the world! I only buy my proteins here. Every piece of meat my family eats comes from their shop. They are always making new things such as fresh sausage weekly and new meat selections frequently. I love how they have a good Italian influence as well. One of the few places I can find guanciale around town. Also they always have gramulata, matador, nduja, etc. When I pickup my order I always plan on having lunch. They have phenomenal sandwiches and burgs. They rotate the sand which menu often which I love and they serve these potato's that comes with some aioli. Each time I come here, I remind myself to buy some ground chorizo or pork to cook at home, and then I'm distracted by how good their burgers are. I stopped in for lunch while in the Nations neighborhood. And it did not disappoint. There is street parking all around the building, so be prepared to parallel park. Once inside, you'll be greeted by plenty of staff members. One was working the register and ringing up lunch sandwiches, while most of the others were working on the butcher side. I got the bulgogi sandwich. The meat was as good as expected, and I hope to be back to continue to support them. It seemed like a popular spot as it started to fill up during the lunch rush, but many took their sandwiches to go. First visit. Burger was good. Meatball sandwich was very good and had great flavor. The Ruben was good, but did not have enough meat. There were 5 deli thin slices of meat and not large enough slices to cover the bread of each half so I took the meat off of one half and added it to the other half so that I could taste some meat with the sauerkraut and dressing. We supported Bare Bones Butcher all through the Covid-19 pandemic. Literally, the only place we purchased meat or chicken, as well as some specialty items, during the entire Covid experience was Bare Bones Butcher. We continued to support Bare Bones post Covid; only to find out multiple times that items we were requesting for pick up weren't always weighing out to what we had requested, nor for what we were being charged. Pricing, in the last few years of shopping with Bare Bones, seems to be somewhat of a gray area. I only called the management on it one time and they did admit their "mistake" and corrected the price, but I've been wary ever since. Only in the past few weeks have I started shopping with them again. Today, I called the store and talked to Zach, who gave me a price for sirloin at $16.99/lb and I placed an order for 1.5lbs to be cut into tips. When I got to the store, much to my surprise, the price was $20.00/lb. Zach even admitted that he had quoted me $16.00/lb (even cheaper) over the phone, but they were now more expensive, after I drove all the way over. I was given the impression there would not be an adjustment to the correction. A $3 to 4/lb premium for the trouble of driving over to the store, or for their staff being too cool to double-check the actual price when a customer places an order over the phone, perhaps? No, Zach, I don't want the sirloin tips at $20.00/lb, I want them at the $16.99/lb price you quoted me over the phone. I really can't believe you asked me that. That's why you still have the sirloin tips. Btw, I went to Whole Foods, got locally sourced GRASS fed, GRASS finished sirloin, cut into tips, for $14.99/lb. The drive was and will continue to be worth it. So, in conclusion, buyer beware. If you want a room full of seemingly hip guys in cool t-shirts and slinky dad caps that won't acknowledge you for the first 5 minutes you stand at the counter, or if you just wanna be ripped off with some good ol' fashioned price gouging, then this is your place. Maybe the cavalierness in this shop makes it cool, but it stops at my wallet. Butcher sold us a pair of fillets. When we got home and unwrapped the steaks, we discovered one was the tail of the fillet that had been sliced up and mashed together to look like a proper steak. When we called to let them know this, the individual on the other end was unable to get a manager and hung up mid-sentence when we let them hear our complaint. I called ahead looking for some beef ribs to smoke for the super bowl. Wesley said he had them and I came in the next day to pick them up. The gentlemen waiting on me cleaned them up nice. My wife and I also had burgers at the shop. Very good quality and some of the best burgers I have had in Nashville. We bought some sausages for the dinner upper bowl while the ribs smoked and everybody loved them. I will buy meat from here as often as I can and eat as often as I can. I stopped by BBB with my husband and a friend this past weekend. It's not a butcher shop - their menu includes several meaty sandwiches! Two of us got the cheeseburger - which is pretty great. It's a classic double patty with cheese, mayo, mustard, and house-made pickles. Simple, but every ingredient/item on this cheeseburger is GOOD. I tasted my husband's pastrami melt as well, which was really tasty as well! We shared an order of the beef fat fries as well. They're to go only. They have a couple of tables outside on the patio. When we arrived, both tables were taken, so we enjoyed our sandwiches standing at the edge of the patio, which totally worked. The service was definitely slow - we waited about a half hour for our sandwiches (they probably have a lot of pickup/takeout orders, as well as the orders for people waiting to eat on the patio - but I only saw a few people waiting and it felt like we waited a long time). It's definitely a little pricey - you're paying for that good beef! But if you're shopping for the city's best $5 burger, this isn't it. But it's gotta be at the top of the list for the city's best $10 burger. Picked up lunch and brought it home. Honestly two of the best sandwiches I've had in Nashville and the beef fat fries blew my mind - crispy on the outside and super soft on the inside with a delicious garlic aioli for dipping. Cheeseburger was just right - not too big and not too small. Generous melted cheese and the bun was amazingly soft. The whole thing just worked really well together and I didn't feel completely crushed after eating it. I could say the same about the meatball sub - perfect size and the quality of meatballs/sauce is extremely high. Again, everything about the sandwich just worked. Bun was amazing and soft. I love this butcher shop. First thing to point out, it's not just a butcher shop. They have an awesome counter with little bar where u can order the most delicious burger among other things to much on. They offer high end cheeses, a variety of snacks and delicious local cookies. The meat is incredibly fresh and you can place an order ahead of time. Most recently I went in to grab some sausages and they had the most delicious Italian meatballs. Ok let's start with the good. I ordered the cubano and it was one of the best cubano sandwiches I have ever had. I also ordered the beef fat taters and loved them, although the 3 people I was with hated them so it may be one of those things that some like and some hate. Now the bad. When you walk into the store/restaurant you go directly towards the butcher area and immediately start looking for a menu or something where you can order from. Then from the other side of the store the bartender yells "are you wanting to order food, down here". It was very confusing. They need menus when you walk in or signage or something that indicates they serve food and not just cut meat and where to go if you want to order food. Next, we sat at the bar and ordered food and if you want a soft drink you need to get up and go to the store and pick it then come back but we were only told this after we placed our orders. I mention this because I actually wanted chips but didn't see any, however after my food came out I saw people with chips and they must've gotten them from the store prior to ordering food. Again, very confusing. Another complaint are those barstools, probably the most uncomfortable barstools I have ever sat on. They are square with sharp edges and the edges dig into your legs and all I wanted to do was hurry up and eat so I could leave, which is not what you want if you're selling drinks by the glass in hopes they order a few and not one-and-done. Last, the bartender told us the burger is the #1/#2 burger in Nashville (a bold statement) and although I didn't order it, two burger fanatics in my office did and they said it was terrible and a 1/10. I saw the burger and the patties were paper thin and it really didn't look appetizing. I usually don't rate based on food I didn't order, but I'm making an exception since their burgers had zero pink in the center and looked like a frozen patty. Overall the experience was average. This was a hard one to rate because my food I loved but with so many negatives I had to bring it down to a 3, almost 2, however with minor fixes this place could be a 5! I'll be back sometime in the future, in the meantime it's just average. read more

All meats are prepared in-house meaning they receive everything as a carcass and butcher and cure as necessary- Parisian ham, jowl bacon, dry aged steaks all locally sourced within a 50 mile radius: even if they didn't meet the mark, anyone would appreciate that kind of authenticity in food prep; however, they nail it head to toe which makes it that much better. They also have a solid little menu that I patronize often. One of the best burgers in town and a delicious Cubano are two of the highlights. Spend the extra $4 on the taters fried in tallow- trust me, they can't be beat. And if you can swing it, add some braised greens too- packed full of meats.
