After hitting my late 20's-early 30's, I turned into somewhat of a Cinderella type. Past midnight is no longer in my vocabulary. Of course, there is always those moments where you get carried away and remember that being in your 30s really just means you do the same dumb stuff as you did in your 20s, but with a lot more finesse. You know that hangover is going to be brutal, so make it worth your while. Bar Ampere is perfect for such occasion. The drinks are good (I have never seen anyone do a jager bomb here), the vibe is calm and they serve decent food until 3am. Seriously, 3am. I pray NEVER to be out that late, but if I am, I want to be snacking on their toasted club sandwich squares with a glass of champagne in hand.

Finally! A great bar that is open during the day! I've managed to come here, on first occasion, for a cheeky mid afternoon Sloe Gin and Tonic. I love Sloe gin and tonics. Simply Heaven. The place is Quiet, which gives me a good opportunity to suss out the over all feel. My take is a futurist bar, with an edge of distopian. Coincidentally, the lights on the bar back, match the cover design for the current Sqaurepusher Album? I was served, and for one drink at that matter, by a charming French man. Charming because he is, but not because he's French necessarily. It would seem that any current customer is a future customer, and I was treated well, even if for just one drink. The best thing is the magic tables- cutlery that slides out of the table itself, yet remains hidden. much like the bar itself, and the back room encountered behind the bar. I must further investigate this linked walkway that people have strongly alluded to, it sound like much fun indeed! One is welcomed here, rather than shunned, though I can't speak for busy periods. The business cards are pretty rad indeed; made to look like an metal tag id plate, one would find on electricity meters and so-on. The bar has a layered design going on; while it's all open, you pass through many sections to get to the bar itself. A great place for social drinks, and I hope to encounter this bar further. The drinks menu is designed around food, so you can have a drink proportionate to when you've eaten or when you are going to. You can never find another bar in the Southern hemisphere that has a great list of absinthe. This bar stocks and imports them from all over the world and its quality is top-notch! Not a fan of absinthe? Their cocktails here are equally amazing. They could customise a drink for you, if you're totally indecisive. The service is exceptional. Giorgio was extremely well-versed in absinthe history and he checks up on us every now and then. He's a great story-teller, engaging, and an attentive host! Giorgio, if you're reading this, don't feel flattered - you know I only speak of the truth! I had absinthe anyway so technically, at this moment, I can only speak of the truth (wink). I didn't manage to chomp down on their recommended burgers here but I would do that during my next visit! The atmosphere is wonderful - great music and beautiful graffiti artwork. I noticed that they also do functions at the back. Didn't manage to check it out cause I wasn't drunk enough to crash the party that was held. Another great bar find! Love it!

The best vibes and ambience--a top notch, true "listening bar". They get it. Great cocktails and simply perfect audio.

Let's start with the service. The staff really need to be commended. Attentive but not annoying, knowledgeable, friendly and made you feel comfortable. Now on to the food! We started with the schmaltz. Literally lard with delicious bits added. So decadent! We've decided this is a once a year treat so we don't have heart attacks, but it's a treat worth dying for! We used the extra bread to mop up the white wine sauce on the oh so soft mussels. I could of had a second plate of these! Just for me. Next was the main - pork belly with cabbage and blood pudding served with sides of heirloom carrots and spetzel (sp?). German Mac and cheese! Perfect combinations! The pork was melt in your mouth amazing! To finish we couldn't go past the creme brûlée. Seriously. SERIOUSLY! This thing is incredible. The softest, silkiest and most creamy creme brûlée ever. A must! Before we stop! The wine list is very carefully curated. You'd be hard pressed to find something not amazing. We went for the Tempranillo and Rose by the glass and couldn't fault their delicious European choices. Ask for recommendations if you're unsure. Can't wait for next season and the next menu!!

Come here for date night or come here for a quick bite i don't care! You will want to come back a second or more times. We decided against the road trip (chefs surprise picks off the menu) and picked what we wanted to eat for the same price. We were not disappointed. Every dish was a delight and i cant even think which one i liked the most. Special mention to the sea snail - awesome! And the creme brulee - best one out! Impeccable service, our assigned waitress is indeed knowledgable on both the drinks and food and very attentive. Try to book the seat by the bar and get lost in watching the kitchen staff do their thing and see how much dallops of butter they chuck in everything om nom! Will be back :)

I was so impressed with their evening fare at a recent Yelp Event that I went back to test the waters with the morning crew. Could the staff be as perky, helpful and efficient as the night staff were? Dealing with the morning Paris end Collins St staff can't be too much fun but wow, the staff here make it seem like a dream. Four staff members, all smiles and all super fast on getting you to wear your happy face. The small seating area inside was full and the outdoor area was filling up with ladies and gents in suits when I stumbled in desperate for my morning latte. The development and investment in their staff really shines through. Two staff taking orders and only one barista on they were easily pumping out takeaway and dine in coffee with ease and efficiency. A recent price hike to $4.50 for a large coffee could have caused issues with regulars but the staff handled it with such diplomacy that the 10 or so people who came in/out at the same time as me happily paid the difference. Let's not forget that they are also serving up some delicious looking breakfast treats. Next time I'll be back for the breakfast slider. It's never too early in the morning for a serving of gruyere.

Must say this place fits in rather well at the Paris end of Collins st with an elegant feel about it. The barista's are blessed with a window view of Collins St and before I had the time to really check the place out my coffee was ready. The coffee was great, I know I'll defiantly be back for another at some point. I'll come back to this review at some point once I've tried a few other things from Doc Martins.

The menu really does, to use an old cliche, offer something for everyone. Whether you're after Spanish "Jabon" or Zucchini flowers stuffed with cheese (although beware if blue cheese is not your thing), quail cigars, slow roasted lamb or wagyu beef, there will be plenty to tempt you at the Panama dining room. This place is ideal for dinner whatever the occasion, be it dinner with a group of close friends or even a special date.
