We had escargot and French onion soup as starters and both were phenomenal. It's nice to finally eat escargot that is not drenched in just butter. For our main entrees, we had the fish & chips and cedar plank maple glazed salmon with a homemade chimichurri. First of all, I'm huge on fish & chips, and I can say this place has one of the best I've had. The batter is perfect and the tartar sauce is homemade! You can taste the freshness. The salmon was cooked perfectly. Not overdone at all. The chimichurri sauce was really good too. We finished off with the crème brûlée, and that was probably my least favorite. It's not bad, but just mediocre. I highly recommend making reservations, especially on a weekend. It gets very busy!

The second visit was amazing! The bartender working that night was incredible--she clearly knows her craft and made our drinks quickly without sacrificing quality. Every cocktail was delicious, and the overall experience was much more enjoyable. Overall, I highly recommend The Coldroom. My only suggestion would be that, with a space that busy, the bar could really benefit from having an additional bartender during peak hours. It would help keep wait times down and make an already great experience even better.

Apothecary Lounge seemed to have many things I knew I'd enjoy, such as the menu items and the atmosphere. It surpassed expectations. Upon entry, going down the stairs, I noticed an enjoyable aroma, but it took me a minute to realize what it was - cocktail smoke from the wood chips used to smoke many cocktails. That eventually included my first drink, the Mortician. Later in the evening, I took advantage of the Dealer's Choice menu option, to have the bartenders craft a drink to my whim. I requested a variation on an Old Fashioned using Canadian Rye and something other than simple syrup as the sweetener. My drink was interesting and complex, including Amaro Nonino (a favorite of mine) and yellow chartreuse. Well done! We ordered both small plates and entrees while there. Everything came out really quickly, everything was fresh and full of flavor. Of everything I ordered, my favorite was the Bang Bang Shrimp. Unfortunately, the wonderful lounge mood-lighting made it difficult for me to take good photos using my older phone. But the highlight of the evening was the service. We could tell we were going to be in for an enjoyable time the minute he greeted us, wearing a tiara, and joking about how he got it and why he wore it. He was friendly and chatty, while being very knowledgeable about the menu, and attentive, checking on us every few minutes with more banter. he had an infectious laugh that he brought to every table, and it was clear he was enjoying what he was doing. I've had probably thousands of meals out over the years, and most service blends together. This waiter, this service, will be memorable, which helped make the entire experience memorable.

As part of the Westin, I believe. I've been traveling in Quebec for about a month, and this is one of top meals I've had. Also, they know how to treat a solo diner. I mean it sucks to eat alone while on vacation, and I felt like my waitress knew how to make me feel comfortable. The dishes which I have pictures below were amazing. I started with the best beet salad I've ever had. It was on a bed of pureed cashews, which added the perfect solidity to the beets and other vegetables. My main was salmon, and there was nothing wrong with this dish, but I could have gotten something like it anywhere. But it was the dessert that was absolutely amazing. That's a vanilla crème on an almond cookie and then infused with this Quebecois fruit called a melitot (I think). Like a subtle blueberry raspberry hybrid. The subtlety with the vanilla crème was perfect. If you have the unfortunate experience of staying in this village, definitely go here.

The omelette is filled with spinach, mushrooms and sauerkraut, which didn't sound appetizing but turned out to be a phenomenal surprise of a combination. The coffee is strong and a delicious blend that had us each downing three cups. A medium roast that isn't watered down like most places, piping hot with all of the options to create the morning coffee of your choice. We are excited to try dinner here soon!
