Superb restaurant. We dined upstairs in the French part (downstairs is Japanese), and enjoyed it so much that we returned the next night to try one of their other menus.
The first night we had the Menu 48E (63E with wine pairing). The Espuma of potatoes with mushrooms, escargots, bacon and onions was rich, earthy and sublime. The Simmental beef was excellent and was beautifully complimented by an exquisite sweet potato gratin layered with a delicate sweet potato puree. The apple tarte was so beyond perfection that I can't even find words to adequately describe the intensity of flavor.
The second night we had the Menu 32E (47E with wine pairing). The crab tartare was lovely and the roast salmon, with slightly smoky flavor, was excellent.
Both evenings started with an amuse bouche of warm asparagus soup with what was described as a coffee cream with nuts. It was delicious.
The wine pairings were absolutely perfect as was the Cremant aperitif.
