While cooking Harry showed us how to prepare pork, and brisket for the pit. Everything from selection of the meat, trimming, and seasoning. The pork butt, and brisket were put on the smoker. We got to eat the Monk Balls along with brisket, pulled pork sliders, chicken, ribs, and Biirria. All this BBQ was delicious. Most of us went in the store to buy some of Harry's products and other items. I can't believe how big this place is and how many people were buying truck loads of wood.
