Roasted Pig is a local Filipino favorite. The insides of the pig are removed and some special ingredients like lemon grass and other spices take its place. The pig is then slowly roasted over a fire. The way Lechon is cooked, for me is an art form. Not everyone can do it. Only but a select few have mastered this dish and perfected the taste.
So believe me when I say that this place serves one of the best Lechons in the Philippines. We ordered one Lechon for my sister's birthday when she turned nineteen. The Lechon was just spot on. It tasted like the one's we used to cook in the province. First of all, the skin was crispy and well seasoned. The fat under the skin was just the right amount: not too much to make you iffy. The on the other hand was just oozing with juiciness. The flavor coming right out of the meat. Lechon Cebu is known to be eaten without gravy because the meat is tasty in itself. The appropriate dip would be soy sauce mixed with vinegar, tomatoes, onions, and chili. With a few cups of rice, this can be one of best meals of your life (if you love roasted pig that is). Lechon is also best enjoyed with a group.
There are places of course that sell low quality Lechon, and it's saddening to think that the pig was not roasted to it's full potential.
