They absolutely did not disappoint. I ordered the Chasu Pork Belly tacos, and honestly they may be the best tacos I've ever had. The pork belly is slow cooked and then pan seared, giving it a rich, savory depth with just the right amount of caramelized texture. The shredded cabbage and pickled red onions add a fresh crunch and brightness that balance the richness perfectly. Sweet pops from the seared corn salsa, along with scallions and toasted sesame seeds, add great layers of flavor. What really brings it all together is the sriracha garlic lime aioli and chasu reduction, which add just the right mix of citrus, spice, and umami. The impressive part is that you can taste every ingredient individually, yet each bite comes together as one perfectly balanced taco. If you're at the Phoodery, don't skip these tacos.

That's enough for a 5, but hold up. This mad man in the sick custom ford truck made a custom sauce that's going to haunt me. Cewpie mayo and green onions too? Wait. Did he roll that in crushed flaming hot Cheetos? It looks good, and is just decedent. Grab yourself a nice beer next door, sit down, and watch the world go by. Ambiance is just... Bliss. Street Noods and a Smash Burger treat me right every time they are available that week, but honestly you could just throw a dart at the menu and win every damn time. EPIC and so creative!
