Fusing Japanese cuisine with western style cooking. Favored by many locals, this place is always packed with people, not to mention the lines at the entrance, it might be a 10-15 minute wait at least before you can be seated. It is honestly quite a decent place to eat in no matter what time of the day; for brunch there are eggs and bacon, for afternoon tea, the toasts and desserts are quite appetizing, whereas for dinner, the pizzas and pastas most certainly could be your full blown meal. The reason why I would describe this place as fusion mainly is because of the way this restaurant takes classic western dishes. Pasta cabonara, both a classic and a standard dish in every western diner, Suzuki has it but topped with a soft boiled egg, not just any, but a japanese onsen tamago. The still liquid yolk meld into the sauce to give extra richess and flavor to the sauce; or a pizza topped with shrips and wasabi dressing which revolutionize your impression on ordinary pizzas. As a cafe, the quality of the quality of the coffee plays an important part in the making or breaking of the cafe; suzuki has tight control in the process of bean selection, roasting as well as brewing. With such passion and dedication, the coffee of Suzuki is rich but not astringent, aromatic but not pungent; it might very well be a perfect cup for to end a meal or to go with your afternoon tea sweets. A japanese take in classical western cuisines, thats what i call propper fusion cooking; it is innovative but at the same time reassuring and comforting.

I made my way into Quarry Bay one cool morning. It did take me a good hour to get there, but nevertheless, I stumbled upon some unique stops enroute to Mian. It's nestled on a smaller street, and it's hard to miss, situated next to a coffee shop. The decor is hip and modern, and clean. Although their menu had other noodle items, I knew I had to get the braised brisket with the 'chinese pappardelle' lo mein. It was exactly how I envisioned it to be. The 2cm thick pappardelle made with duck egg had the perfect texture. The al dente texture complimented the sauce well; it was coated with the slighty sweet soy sauce of the beef. I savoured every bite, and wanted more of the noodles. This place is worth the trek, the quality of the noodles and the meat are stand outs, and one can always explore Quarry Bay afterwards.

There's a electronic ticket machine in the front where you get a waiting number (and optionally, you can leave a phone number and they will call you when it's time). I was about 7 spots behind was seated in about 10 minutes. Of course I couldn't pass on the ramen in Ippudo. On the menu I noticed they had half portion options for the Shiromaru and Akamaru options, so I opted to try one of each ($42 HKD Shiromaru 1/2, $45 HKD Akamaru 1/2), and it was a fantastic decision. The broths were definitely the highlight. The shiromaru had a lighter broth where you can really taste the pork flavors from the tonkotsu broth. The akamaru had some black garlic oil, as well as a more spicy kick that wasn't too overpowering but transformed the tonkotsu broth into a more vibrant, powerful flavor. And eating them right after the other was a perfect yin and yang combination. The chashu was flavorful and had a good amount of pork fat but they were very thin slices and not a whole lot of meat. The texture of the noodles was good: thin but springy. Combined with the green onions, bean sprouts, and kikurage, it was very delicious. Portions are a bit on the small size (especially the 1/2 size options) but well worth the price. Highly, highly recommended!

There's an option to add $28 for a combo, i.e. half-boiled egg + salad + soft drinks. The soup is very concentrated and salty but filled with the smell of truffles which is very pleasant. The chewiness of noodles was alright though my personal preference is to be more softer (I am too lazy to chew). The ramen also goes with two pieces of meat which is tender to eat. The place is really small with only a few tables (outdoor seating as well if you do not mind the heat). There is nothing fancy about the décor here but I have seen quite a lot of happy customers here so I think my friend has recommended a rather nice place. Since he has been to Tibet and (supposedly) knows more about its food, I just let me order. He ordered signature noodles with muttons and beef for me. After a while the food was served. One of the staff came to us (maybe I did look like I was not in my element) and told us before we ate, we should smell it first. And we did. I could not really describe that but it was rather special, in a good way. The staff told us that for Tibetan food, it is very common to use something called "Ground Cumin" that has a very distinct aroma to it. And then I had a bite of the mutton, which was not so chewy and it went so well with the soup. I enjoyed my very first Tibetan food very much and since I do not know when I can finally go to Tibet, I guess I will come here again.
