It's been a few shots now and for the most part, I've been content with all I've sampled. Ippudo might be in a household name in Asia, but the HK version certainly has its own specialties in what seems like a regionalized menu. There were a number of things I've never seen in NY or Japan but I suppose that's the beauty in visiting other franchise locations right? If only all global brands had this much variety. The prices are still $$$, but it's nice enough in here where people will still come rolling in. Firstly, the lobster ramen? This is likely seasonal and even a little weird. The lobster meat is tasty and while the presentation is on point, the broth does not complement the lobster at all. By retaining the shell, it forces the diner to eat both separately (i.e. removing the lobster and eating the noodles). Awkward sure, but HK'ers will definitely bite. Gone are also the hirata pork buns that have garnered a lot of fanfare and in their place, a vastly wimpier charsiu version that is a tad disappointing. They also have a happy hour that includes various skewers / izakaya pieces at discounted prices, along with frozen beer and a number of other items I've not seen in Ippudo before (scotch eggs anyone?). Someone tell the chef to relax on the chives for the gyoza ... they were practically buried in green. I still wouldn't put it past Ippudo to showcase some quality meals. The decor here is modern, the interior is clean, and the place is large enough to accommodate all kinds of party sizes. There is still the semi-cheesy Japanese welcomes from the staff, but I've actually encountered quite a few actual Japanese folks working here. Our water glasses were filled before they got empty. We ordered Miso Ramen and Shoyu Ramen. The latter soy sauce flavor was good but I still thought the soybean paste flavor was better. I'm biased? The noodles were al dente. Unfortunately, the gyozas were nice and crispy only on one side. They were just too soft when you flipped them over. I prefer them fried evenly. One nice thing about Santouka is the consistency of their ramen broth. I haven't been to very many of their branches but so far the flavor has always been reliable to me, even across the ocean. If I have a hankering for Hokkaido ramen, I know where to get my fix.

We saw other guests with a large bowl or platter of sashimi so they must have ordered a quantity of 6 or 10? Anyway all the ordering is done via the app and you can see what you've ordered. They only let you order so much at a time. You can place an order but it will be paused until you queue comes up again. A bit getting used to. We lost track of wha we ordered, what we ate and what is in queue. The food is good, the price is good so no real complaints otherwise. Place was busy so make a reservation to be safe.

It is everywhere in the island, yet so few are at the level of Deluxe Daikiya (極尚大喜屋日本料理) where most everything is surprisingly good. And by good, I mean AYCE good. But for the untrained palate who is willing to pay 200HKD, it may as well be an omakase of young chefs shucking every raw oyster and dicing up the cuts of seemingly fresh fish for the masses to enjoy. For a place that commands unlimited quantities a la carte, they have done a great job of hiding the fact they operate as one food wise. Unlike it's sister restaurant (#2) just around the corner, the scenery here is oddly more upscale and intimate. Everything from the lights to the contemporary decor feels like this is truly a more "deluxe" version of the Daikiya family. The only disruption of course, are the loud mouthed patrons, which is then followed by equally loud if not louder wait staff, who are moving swiftly to keep up with the pace of food coming in and out. From sushi alone, there is a lot to appreciate. The cuts of sashimi, in particular the salmon, mackerel, and hamachi are super tender and have no hint of fishiness. I was and still am surprised at the creaminess of the uni, which is really tasty in handroll form as well as nigiri style. I was also reasonably impressed with their cuts of raw scallop and their sweet ebi shrimp. I won't lie and say I enjoyed the tuna as much, but no decent grade of tuna would ever come out of a place like this without costing at least $400-500HKD a head. Another surprise: Their handrolls. They arrive nicely packed with just enough rice to add to the palate, but also feature a lot of great items (shout out to the soft shell crab!) that make them stand out. The crispy nori on the outside is a nice bite, especially when it's freshly made. Don't wait till it gets cold, that's a straight newbie mistake. In terms of the cooked food, there is so much that I couldn't possibly cover all of it. But the highlights would include their garlic sizzle, faux-wagu beef cubes served with a side of dashi infused soy. The creamy seafood mentai pasta is also tasty, but should be left for people who are not into the raw as it is a lot more filling than the portion shows. Also, get on the bandwagon for their tuna and/or hamachi jaw / collar, which is grilled and quite succulent given how little meat there is. The AYCE experience in HK is far from the Todai / Minado buffet auras of the US. Instead, it stands on its own for good execution on a unlimited scale and is worth the money ($198-298 for lunch/dinner) for anyone who is crazy about Japanese cuisine and a seafood addict.
