And I can tell you the spices are so rich and fulfilling. If you love noodles and soup, I can assure you you'll love the Red King at Butao. I've also tried the Black King, and it was alright. I definitely prefer the Red King over the Black. I tried the Red King with x4 spiciness level and it was just enough for me to be able to handle it. Any more spicy and it maybe would've been to hard to eat. The hospitality is great. The waitresses and waiters are always ready to help and they put a napkin on your lap right before you start eating. The place comes with free refillable lemon water. The ramen only takes about 5 minutes to prepare, so very fast service. They have an English and Chinese menu, so there's no need to worry about a language barrier. Similar to the cocktails, the food is a mixture of Japanese izakaya and Brazilian fare, mainly in the form of small plates and skewers. The presentation is spot on, though the portion size leaves much to be desired. Price wise, it's up there but nothing has been impressive enough to warrant it. A quality spread of food that includes a soup, a few skewers with sides, and a few "big plates" could get very spendy ($1000+) very quickly. Hence, the combo meals during lunch time seem to provide the most value at $88 each. But despite the pricey everything they offer, the real issue I've had in the past has been the service. A lot of mishaps with my group bills and frankly some oddball issues with the speed of the food. It seemed silly that I would need to do this, considering that the restaurant was pretty empty, but I guess they need this during the lunch and dinner rush. Someone came and called my number (I looked around and no one else was around...) and he brought me to the long communal table in the middle of the restaurant. The menus are already on the table. I browsed through it and noticed that they offered half portions of their akamaru shinaji and shiromaru motoaji ramens. This is perfect for those of us who aren't that hungry (or perhaps have been eating too many carbs in Hong Kong and feel a little guilty eating a full portion bowl...?). I ordered a half portion of the shiromaru motoaji ramen and also the scotch egg, which is a Hong Kong special item. The server asked if I preferred my ramen cooked soft, medium, or hard. I picked medium. They give you cold tea, and there are chopsticks, sesame seeds, the red ramen seasoning powder on the table. There is also fresh garlic cloves and a garlic press, which I thought was pretty cool. Instead of powder, you can press your own fresh garlic into your ramen broth! My ramen came out pretty quickly and it was delicious! The ramen was cooked perfectly, the piece of pork was tasty. The server came out and told me that my Scotch egg would take quite a while to come out - maybe about 15-20 minutes. I didn't mind, since I could just eat my ramen and drink the tea - I was in no rush to get anywhere. But I appreciated that he told me this info. I finished my ramen (perhaps I should've gotten a full portion...or maybe a half portion of the akamaru ramen!) and eventually my Scotch egg came out. I loved eating Scotch eggs as a snack when I was in England, so I was excited to see this on the menu. Their version is slightly different in that there isn't as much sausage meat on the outside. At first, I couldn't tell if there was any meat, since the layer was so thin. It was pretty tasty. And it came with a side salad, which was really fresh. Overall, my food was tasty. The rice is also well cooked and the two components make a nice pairing. The fried chicken (karage) here is also very good. Nice and juicy on the inside and a crispy crunch on the outside. The broth is light, cooked with a blend of asari clams and chicken, with a hint of truffle oil while the Char Siu is thin and non-fatty. Though not a "wow" experience, I do believe that Tsuta is currently one of the top ramen shops in Hong Kong. So what was the big attraction of this place? For me it was the Sichuan Dan Dan Noodles (四川擔擔麵) which tastes quite authentic according to many sichuan friends (I haven't been to Sichuan province yet, but it is on my list. Maybe this year is the year who knows?!). You know its so good that they've got a write up on the dish and have put up the prices multiple times in the last 6 months. Also it's not very expensive so you that also warrants multiple visits in a week - lets hope the prices don't go up too much. The levels of spiciness is also quite authentic (on par with sichuan restaurants on the mainland, which I guess is close enough to the real deal. For my frame of reference - I've been to Sichuan restaurants in Shanghai which was recommended by Sichuan friends so I guess I know what I'm tasting). For the real deal, get 3 or 4 chillies, and then wash it down with some soy juice (豆奶). Though I guess if you were going in a large group, you might have to wait a little as the place is small. If you go on your own, you can almost walk in without waiting.
