We're used to chicken shawarma--a Middle Eastern favorite, with marinated chicken broiled on a vertical brazier and packed with bold, earthy spices. But today, we were introduced to the Greek version: chicken gyro--herby, tender, juicy, and finished with just the right crispy edges. We waited a little extra for the chicken to broil, and it was totally worth it. The housemade red chile sauce added just the right splash of tangy heat to the chicken and faded before it got too hot.
