I'm one of those home chefs, trained from watching and reading but with no restaurant experience. I've watched so many YouTube channels on how to sharpen knives either on a stone or via pull-throughs. Some of my knives had heavy swirl marks on the steel, most likely because I was doing something wrong while trying to sharpen them myself. After many of these do-it-yourself remedies, I figured I'd get someone to do it for me, the right way. I googled knife sharpening local to me and found Ziggy, almost an hour away! I called and explained to Ziggy what I've tried doing and that I thought I just needed them done by a professional. Ziggy told me they'd be finished in 2-3 days for 5 of my Zwilling knives. A few days later, I received the phone call telling me that my knives were ready to be picked up. I got them home and WOW! I didn't think the swirl marks would come out. I don't know what he did but my knives look amazing AND, they are ridiculously sharp! What a great service! I left Ziggy a message and within 12 hours I received a text with the information I needed to send my knifes for sharpening. I went to Ziggy's website and printed the order form and completed the form and package the knives and included a ups return label along with my check and so Ziggy can return my knives after sharpening. The service takes about a week between shipping, sharpening. I got all my knives and these knives have the best edge they ever had. Better then the manufacturer provides. The cutting is effortless. We've had dull knives for years. On the plus side, I wouldn't cut off my finger while cooking or cleaning. On the down side, it was getting to the point where I couldn't cut much of anything. I searched for knife sharpening services and saw a few listings on Google. ZB Sharpening stood out because of the overwhelming customer satisfaction. The bottom line is I ended up doing 10 knives for a very reasonable price. And all 10 came back with perfect edges and sharper than they had been in years - maybe sharper in some cases than when purchased. The best part of working with ZB Sharpening is you have to drop them off in Hillsborough. Yeah, I know, that is not the most convenient thing in the world. But it also gave the whole thing a bit of a clandestine atmosphere. Meeting a stranger is a deserted parking lot off Route 206 to drop off knives? I mean, who does that? But the great benefit of doing this in the "have everything delivered" Amazon age is that it became a truly personal transaction. Because you don't just drop off and pick up knives, you get a tutorial on how to best take care of the knives. Plus written email instructions and website links and a recommendation on the best knife sharpener you can buy (hint: ceramic, not steel - and never electric). My knives are sharper than they've ever been! I have Pampered Chef German Steel knives. About three years ago I went on a hunt to have them sharpened. I studied Alton Brown's teachings and set out to local restaurants in search of their sensei. Unfortunately, what I found was an Amish man named Amos that put my knives to the grinder. Ziggy fixed them and put on the best blade imaginable. Not only are the sharp, but they are sharpened in such a way that they are likely to stay that way for an extended period. Ziggy has a great website and a simple service. Don't read too much into the pricing. For most local home cooks, it's $40. I took complete set of knives that have never been professionally sharpened before. As well as two pairs of scissors. I just finished using them for the first time since I got them back (yesterday) and let me simply say that I am amazed. Razor sharp and better than when I bought them a few years back. Friendly service and very professional. The advice that I received on how to take care of them. What amazes me is he almost teaches you to do such a good job taking care of your knives after he brings them back from the dead that you don't need to bring them back to him again. I had a set of VERY dull kitchen knives which were almost 19 years old. I was going to buy another set but then came across ZB Sharpening through a Google search. I contacted Ziggy (he was very good in responding to email) and mailed my knives in. If you live local, he would also meet you to save shipping costs. The sharpening costs were very reasonable and a lot less if I bought a new set of knives. I had my knives back within a few days.
