They use the croissants to make sandwiches called Toastiest that are pressed in a panini press. Whatever cheese they use is delicious. Now it is actually called underground coffee ever since the new owner has taken over and made it into a coffee roasting location.

The second star is for the venue itself ...... it appears to be a converted small church with tables inside and outside .... it's well decorated and feels homely. Unfortunately, the service was just a little below average. As we waited outside and reading a menu practically in front of staff, no one bothered to approach us and update us on the seating situation. As we had our little four legged mate with us .... we needed an outside table ..... and any idea of waiting time would have been helpful. I'm ok with no table service ..... but then ordering was a little hectic and I didn't feel like I was enjoying any part of this experience. As pictured, the food was uninspired and average ..... lacked any real flavor ..... and ended just being a snack as we proceeded to another cafe for something more filling.

When you know it's the opening weekend for a new place, you expect looooooong waits, kitchen dramas, lost orders and grumpy staff... But what we got was the complete opposite. The place was completely packed, but the team at Finn & Co. had everything under control. Staff were switched on. Food was fantastic. Coffee was great. Service was friendly, and waits were short. At our table we tried the breakfast burger, the waffles, the avo and goats cheese, and the mushrooms. And the coffee of course! All got big thumbs up. I can't recommend this place enough. Next time I have to try the burgers (major food envy)

The coffee was just passable, but is very easily outdone by numerous cafes on the strip. The menu is fun looking, but pretty starch heavy. If you're looking for something light or sans bread then your options are limited to a few salads. However, if you're looking for burgers or tasty breakfast fare, this will probably hit the spot. In particular they serve freakshakes, a trendy milkshake dessert abomination. From afar they look pretty great. After something lighter but filling, I chose the chorizo salad w/ feta, caramelised onions, baby spinach, cous cous and pumpkin. It was a bit of a dudes salad and it was alright, but it lacked brightness and could really be improved by the addition of lemon or a sharper vinaigrette. I ordered a cheese toastie for my not quite toddler and when it arrived I finally understood why a salad, a latte and a kids sandwich cost me $31. It was ginormous. More than any kid I know could handle. It came with a super creamy coleslaw which again could benefit from some tang. It's a shame you have to be under 12 to eat it, because it's absolutely an adult serving. So, look.. It's definitely got promise but it's a bit more miss than hit right now. It's expensive for the end result and the reality is that there's better offerings for the same price on the street. Hire a banging barista and review the menu offerings and it'd be killing it.

Alert the media. I've found Elvis…read more He's standing in the corner of this cafe in Glenbrook. Seriously, a life size Elvis. For what earthly reason I have no idea. If the place was going for the full retro diner vibe, then it'd make sense. As it is, think manufactured cafe-by-plan but with Elvis and a couple of 'star' plaques on the wall, J-Lo included. Now, I'm not exactly up on her movements, but I'm pretty darn sure she's never been to Glenbrook. So - why? I walked in here early one morning, before anything else was open, desperate for caffeine. I wasn't expecting much, having been to the cafe-by-rote replica in Springwood, both seem to be outgrowths of the real estate agents they're parked next to. Sadly, the giftshop was closed and I am unable to report on the allegedly 'famous' painted Australian panorama. After jumping out of my skin at Elvis (out of the corner of my eye I thought it was an actual person for a second) I headed straight for a booth only to find they were all marked off as reserved. Before 9am. In Glenbrook. There were three other people in there. Don't get me wrong, the coffee was better than expected, the waitress was great and I know I'm not the target demographic for the 'traditional' food on offer. In fact, the more I sat there, the more the place took on a David-Lynch-type vibe which was kind of intriguing. The place is echoing and a bit dark, and when some creepy old guy started warbling 'Over the Rainbow' on the stereo I started surreptitously looking around in case of anyone huffing on an oxygen mask. I half expected bizarro no-eyebrow guy to walk up, hand me a phone and tell me to ring my house because he's there right now... Didn't think to check if they had cherry pie on the menu. If they don't, they should. Seriously weird.

My bf & I loved the creamy crepes and the grilled salmon toast (had yummy cheese&avocado)...even the side house salad was the best house salad we ever had! How weird is it for someone to review the house salad?? But seriously, I think it says a lot about this place! It had some unique fresh greens and an amazingly light fresh vinegrette! We also highly recommend the chocolate topped custard bar (has shredded cocunut...sorry forget the name) AND the Florentine cookies! Boo on the Choc Roc cake, too dry like shortbread cookies or biscotti (not my thing...I'm all about moist, rich, creamy, heavy)!!!! No wi fi is a boo! Easy to park and find seating. Wish I could come here too every morning&lunch.

Food and drinks are always delivered to your table within a reasonable time frame. I am not a hot coffee drinker, but asked my coffee-fiend friend what she thought of hers (I believe she had a regular cappuccino) and she couldn't fault it. I had some of their famous waffles which are SO DELICIOUS. The fruit is fresh and they make the waffles right there (no re-heating). I also tried a cupcake and a macron and they were yummy (it was a big day for my stomach). I also like how they've started to introduce gluten-free and dairy-free options, as some of my friends can't tolerate gluten or dairy. The interior is quirky and vintage land which makes it stand out in Penrith. Waffle Co reminds me of one of the funky and hip cafes you'd find down a back alley in Melbourne, except it's in western sydney! It really does make it stand out from the regular run-of-the-mill cafes around here.
