I always get the Tonkotsu... I think the broth is made over a 2 or 3 day period, never tasted anything like it. You better believe I don't leave an ounce of it left. Everything is cooked to perfection - I mean, if you take the time to talk to the chef, he slept on the floor on a Tokyo kitchen for months learning these recipes.
