If you get any cooked fish here, such as frites/fish sticks, or kibbeling, they reheat it in the microwave, which leads to spongy soggy fish that makes me sad. If you take the fish home to heat up in the oven it might be ok, but I advise against eating warm fish that's been heated up in the shop.

But we knew we had to try it, and life is short. It is a tiny stand located along a central canal in the heart of the city. Business is hopping here. We got the picked herring and kibbeling, which are the main staples here. The pickled herring was, well, something you either love or don't. It has somewhat of a gelatinous texture that can be off-putting, but when you take a bite with the sides of sweet pickles and onions, it shines. The Kibbeling was out of this world. Perfectly fried with a crunchy batter that had a hint of, hmmm, curry, maybe. It was amazing. Although the batter was thick and tasty, it didn't outdo the delicious cod. The staff here was friendly, and having this Dutch food along a canal in Amsterdam made for a memorable experience. There are plenty of places to sit near the stand - enjoy this tasty food and watch the world go by.

The line on the two days we were there wasn't long and waited less than 5 minutes both times to place our order. The first stop I bought one order of herring with pickles, onion and the "Nederlandse vlag." We returned two days later and purchased another order of the herring and a herring sandwich with the herring served on a simple white roll with onion and pickles. Both were excellent. Didn't sample the fried cod, eel sandwich or the mackerel. Would I return? Without a doubt! While we had some excellent food in Amsterdam, Frens topped my list as a must visit stand when walking around Amsterdam!

Despite what Amsterdam is known for by many foreign visitors, Frank's Smoke House is NOT a coffeeshop, but specializes in something else that's hard to come by in the rest of Europe: Alaskan salmon. Living in Paris, the firm, orange-tinged flesh of Pacific Northwest sockeye salmon is but a distant dream, a rich memory of a past life on the west coast of the United States. The occasional wild North Atlantic salmon makes its way onto my dinner plate or sushi platter, but more often than not I'm turning my nose up at the farmed stuff. So imagine my absolute pleasure when my wife dug up information on Frank's, and my subsequent fish-gasm, if you will, upon getting there and seeing the hundreds of real Alaskan salmon bellies hanging in the back room. That, ladies and gentlemen, was how my mind was blown. I normally try to eat local, organic, and all that other stuff. But I'll easily sacrifice my foodie principles for one bite of delicious sockeye salmon from halfway across the world. A small Chinook smoked sockeye salmon broodtje (sandwich on a roll) isn't exactly cheap at €7, but it's so worth the price for a subtle wave of salmony flavor you simply don't come across in this part of the globe. I don't even want to calculate what the carbon offset would cost, but it's still worth it. On top of that, the service is friendly and despite having a bit of a cold cafeteria setting there's a somewhat "gezellig" vibe to the joint, with lots of locals stopping in to buy varieties of smoked fish, fish eggs, and other things that would go nicely on a buffet table. The lovely lady behind the counter at the time told us that Frank himself is originally from Maryland -hence the Maryland crab cakes in the deli case. I'll be trying those next time, if I'm not stuffing my gob full of sockeye.

Plus, herring has a lot of vitamin D, which is so needed, since our climate does not provide so much sun in west of Europe. I believe a great way to try Dutch food is to just simply, stop into a fish shop or street venue and sample a few popular Dutch snacks. Raw Herring is one of the traditional top Dutch snacks, it is typically served with chopped onions and pickle. A cuisine, I think would be very much popular in Japan. When I lived in Japan, it was hard for me to stomach raw fish. So I am still trying to build an acquire taste for herring. Now as far as for kibbling, I love it! Reminds me of back in the day when I was in the south, enjoying some deep fried fish.
