The baccala mantecato with polenta chips, pungent (ie smells like the canals) but tempered by strong peppery flavor of the rich EVOO. Massive umami finish. All good eats. A plate of razor clams done traditionally and finished with EVOO, perfect. Sweet, plump, tender, and juicy. The restaurant's signature "Veal Shank Cooked at Low Temperature", a sous vide veal shank served boneless in a sauce made from the cooking jus reduction and mounted with pumpkin cream, outstanding.
