We started researching it and found that they will use some kind of saline solution (Sodium Tripolyphosphate) to preserve the longevity of the fish. The effect of this solution is an exaggerated puffing of the fish enlarging it and turning the fish into an inedible rubber texture. Awful! How in a place surrounded by water and local fishing, can fresh fish not be in markets - but sold like it is fresh?

If you need stuff for meals, head to Publix on the north end of the island in Martin County about 10 minutes away or go onto Nettles Island at the stoplight 2 minutes south of Seabreeze and hit up the Village Grocer owned by Bob.
