It is the workshop of a meat craftsman. It's like going to the creamery where one of the worlds finest cheeses are made, as opposed to a cheese shop. And, if you're lucky you can meet The Godfather of Meat himself, Marc du Bourg. Marc was exceptionally generous with his time and knowledge. I returned to Orlando confident that I now probably know more about dry aging beef than anyone else in Florida, because I learned from the world's leading expert. Nobody else is doing what Marc does, his 1-year and older beef is a delicacy that can only be found here. And if you like meat and have a taste for aged foods then you must experience du Bourg meat. I ended up going twice. The first time I got a double-rib steak of the 120 day beef. Marc gave me careful guidance on how to prepare it. His technique is simple but works exceptionally well, and it really highlights what makes this meat special. So, if you are buying his good stuff then get the instructions and follow them. Keep the prep simple, you want to let the meat be center stage. It is intensely beefy, rich, and soft. Wonderful. The second time I went I got a small sample of the 180 day beef. It was even more intense on the flavor, with a bit of a blue cheese funk in the background (which I loved). It is an exceptionally elite ingredient. I think on my next visit I might venture to the exotic 1 year (or longer). It's expensive, but as a foodie it will be worth it to me to experience something so exclusive, sold to me by the artist who designed the technique and trimmed my steak to order. If you like dry aged beef and you have the means, you must go to meet The Godfather. You won't regret it.

Gotta give it to them they really do have a great selection of steaks with amazing marbling. It's always so juicy and amazing. The cool part is that they have pre made food like chimichurri brochettes, bbq ribs and souvlakia for easy grilling. The pret a manger selection at the counter is packed with goodies like (shepherds pie, Cesar salad and onion soup) I noticed that they actually have beer and wine here and they are all Quebec local brands. I love that they keep it local good eats and good drinks.

As others have said, they also make sandwiches to go, which one can choose to eat at their little parcel shelf next to the door. The appeal of this place for me, though, is the partially-smoked and cured pork shoulder rolls they keep in the small cold case along the back wall. They're not even labelled, so you may have to ask to be pointed at them. But do ask. One of those balls of meat, simmered in a cauldron of water for 150 minutes, yields both the most densely-flavored, tastiest cold pork you'll ever put on your sideboard, and a pot of truly magnificent stock for your next pea or white bean soup. They also sell a couple of different varieties of bacon, in slabs if you wish. And there is no question too stupid for the bright lady in the baseball hat behind the cash. This is another of those little places that makes cooking my way through a Montreal winter into something I almost look forward to in summer.

With Montreal Canadians and vintage Quebecois memorabilia, it's really not hard to imagine what a real Mom and Pop stores on Main Street used to look like before giant supermarkets and mega stores drove them out of business. This place has absolutely everything to address your poultry needs and then some. The chickens are all grain-fed and sourced locally in Quebec. My favourite thing to get from here is the bambi (cerf) sausages - I can't recommend them enough! They have a wide selection of home-made sausages, and all the ones I've tried have been great. The chicken they sell is grain feed and from Quebec, so it's the good stuff. They also have a selection of cheeses and pates, which are nice to round-out a meal. Another thing I like to go there for is their marinated steaks, all of which are good (my favourite is the spicey one). They also have minced horse meat, which is great for burgers. If you're in the neighbourhood or live not to far, and want fantastic quality meats, then you need to come here.
