The manager(?), Ryan or Brian, I honestly can't remember which, noticed me getting a little antsy and came over to check in. That little bit of attention made a difference because I was definitely starving and unsure if I would wait. I ended up staying seated at the bar and ordering the Quesabirria. Best decision. Cheesy, flavorful, packed with birria, and served with consommé for dipping. Messy in the best way and absolutely worth ordering again. At that point I understood why the place was so packed. Service at the bar was quick and friendly, the food came out hot, and the restaurant has a lively energy that works for the concept.
