Outstanding Green Sauce

While in the area and seeking an interesting and different breakfast on a weekday morning, I stopped in for a breakfast burrito. The awesome lady behind the counter told me they didn't really have breakfast burritos, but they had several styles of amazing breakfasts already made, which they server with a stack of tortillas, so I opted for the chorizo huevos option. She gave me a couple sides of their green sauce to go with it. I sat in the truck, opened the chorizo and it smelled and looked great! The tortillas were outstanding (corn) and then the salsa - unbelievable!!! I made a taco, poured the salsa on top and took a bite and it was authentic and GREAT! The flavors were on-point and heat was perfect and even though they make these chorizo breakfasts in advance, they clearly don't sit in the warmer long, because it was fresh and piping hot! I could have easily made 5 breakfast tacos with all the chorizo and huevo plus the corn tortillas they gave! Such a fantastic, authentic Mexican breakfast! I'll definitely come back!!

I am only rating my tortilla that was hot and fresh when I bought it. They got confused though on what I ordered , which was carne asada - they gave me a very fatty fried pork. My stomach aches after I ate a little bit. I probably will change my review later on, when I try their chicken - they were out of the rotisserie.

To start off pulling up to the place smelled soooo good. You get that smell of the BBQ pit and the food thats on the grill throughout the parking lot. Inside its like walking into little Mexico. They have all the seasonings and spices you need to make your own authentic Mexican food. The food is behind a glass case, so you have to let the awesome ladies behind the counter know what you want. THE FOOD, the food is soooo good. The carnitas and the BBQ chicken was so full of flavor and fall apart. The tortillas come in a very big pack and you can take the rest home. The salsa is just how I like it....SPICY!!! It's more of a store, but there is seating inside if you want to sit and eat what you ordered. We will definitely come back and eat here again!!!

Very confusing if you don't understand the set up. They had a hard time understanding me and my broken Spanish. So maybe get an bilingual speaker on the front end? At first I was excited about the meat but ordered different types to try, got home it was fatty and greasy. The fried pork was impossible to eat because it was so hard. They didn't have any side, the tortillas were just ok. The 2 stars are for the rotisserie styled chicken which by itself would have been amazing. Not a fan of this restaurant/food kitchen style. I won't be back.

I judge every spot against what I'm putting out at home... and a lot of places fall short -- whether it's weak seasoning, lack of smoke, or just flat-out underwhelming flavor. But Wild Waylon's BBQ? Yeah... this place is LEGIT. We went all in: pulled pork, brisket, and the big dino beef ribs -- plus mac and cheese, green beans, a bacon-wrapped jalapeño popper, and the jalapeño cornbread. Every single thing delivered. The brisket had great flavor and was cooked right, the pulled pork was juicy and well-seasoned, and those beef ribs... absolute showstopper. Big, meaty, packed with flavor, and done exactly how you'd want them. Sides were just as solid. The mac and cheese was rich and satisfying, green beans had great flavor, and that bacon-wrapped jalapeño popper + jalapeño cornbread combo? Yeah... ridiculous in the best way. And the smoke -- you can actually taste it. That alone separates them from a lot of spots. The whole experience was on point too. The big pit out front lets you know immediately they're serious about their craft, and the staff was friendly, welcoming, and genuinely helpful the entire time. Prices are also very reasonable for the quality you're getting. This is one of the few places I've been where I walk away thinking, "yeah... they're doing it right." If you're anywhere near Fredericksburg -- or even just passing through -- this spot is absolutely worth the stop.

Unfortunately, our last two visits have been marred by the same new server who was consistently rude and dismissive. On our most recent visit, we waited over 10 minutes before she approached our table. My husband ordered a meal (he loves the BBQ), but I cannot eat the smoked food due to stomach issues. I simply ordered a rum and coke with lime. She responded with "Pepsi?" and later repeated back only "Pepsi" when confirming the order, completely ignoring the rum portion even after I emphasized it. When my husband requested sangria -- something the bartender has happily made for us on previous Friday/Saturday visits -- she insisted they don't serve it and that he must have had it on a Sunday. We never visit on Sundays. Later in the evening, we moved closer to the fire pit because it was cool outside. She brought our water over and checked on us a couple of times. We told her we were fine. Toward the end of the night, my husband went to the bar to order another drink (as we've done before when the server isn't readily available). When it came time to close out our tab, the server arrived with the manager (Nolan) in tow. His presence felt awkward and accusatory -- as if we were about to skip out on the bill or posed some kind of problem. When we expressed confusion, he said he was just there to "warm his hands." As longtime, regular customers, we found the overall treatment disrespectful and off-putting. We tried speaking with a manager afterward to share our experience, but it didn't seem to go anywhere. We genuinely wanted to continue supporting this spot for the music and atmosphere, but after two poor experiences in a row with this server and the strange handling at close-out, we will not be returning. There are plenty of other options nearby.

My preference is for whole pieces of smoked chicken but I get it. The NC sauce in the table was an ok compliment to this. Brisket: got the combo lean/fatty. Both were good, lean just a touch dry but not horrible. Cole slaw: good. Was worried when I sat down because there's no s&p on the table.....didn't need it. Peach cobbler: star of dinner. Nothing beats hot peach cobbler, even if it's just "pretty good" cobbler. Overall: food was good. Nothing spectacular, but solid. Much better than my first trip. Service was excellent (it wasn't super busy). Ambiance: sort of a Texas locker room/military/fire department sort of thing going on. Pretty ok. Cons: food doesn't stay warm long on a metal tray inside a cold restaurant. And out of 7 choices for bbq sauce, not a single "really good" one. The Memphis sauce was probably the best of all 7. It was so much better than the sausage I got. The sausage was cooked great, had a nice smoke, but was bland and tasted almost like a boring ham. It definitely needed a sauce on it, and the staff recommended their mustard sauce, which I thought was really nice. In fact, my favs on this visit were the KC, Mustard, and Nashville Hot Sauce. I was there during the noon time period where the National Anthem plays and it was great to see all the patrons participate in the Anthem. Of course, the restaurant's staff participated and that's GREAT! Mission not only makes chain BBQ great, but they help to keep Making American Great Again too!!

They offer all the typical BBQ joint menu items (Brisket, Pulled pork, Pulled chicken., Ribs, etc) and all the typical sides too (beans, slaw, green beans, corn bread, etc). I also liked that they have about 6 BBQ sauces, all made by them and all different styles/flavors. We got a pulled chicken sandwich and a brisket sandwich. For sides, we opted for their cole slaw and baked beans. I also got one of each of their sauces to try. Prices seemed fair, at $28 for this order (what I said we got). Getting home and cracking into our order - The slaw was 'ok' but seemed to be lacking depth of flavor (celery seed and pepper) and had a slightly off taste. Plus, the container was filled about half way. The beans were really good! Nice flavor, spice, and sweetness to them. Next was to try the sandwiches... My wife got the pulled chicken sandwich and as soon as she unwrapped it, she thought it was pork, as it looked chopped and was in extremely small pieces. She tried to eat it and wanted to enjoy it, but the texture was like sawdust, as it was chopped so finely. For me, I got the brisket and when I opened it, I felt like the beef was a little overdone, but the flavor was decent. The texture was tender, but slightly dry - it definitely needed sauce. As for those sauces - My favs were the mustard and the Texas - Both were flavorful and really nice. Overall - Not bad, but if I went back, I would totally try other items.
