I can't give it 5 stars because the place is so small, you have to move constantly to let the waitress go past your table and then back when she goes back in the open kitchen. Also, I went with 3 girlfriends, we were excited to see each other and talked a bit loud just greeting each other and we got SHUSHED by customers because basically you have to almost whisper in there. Unbelievably they do not have Tonkotsu Ramen on the menu which is the pinnacle dish in ramen culture and the ultimate tell of a ramen shop's quality (good homemade noodles are child's play). Likely because they don't want to dedicate themselves to making the broth. We ordered the Gyoza; they completely forgot. We reminded them and asked them (in native french) NOT to hurry, rather to take the time to cook them properly. They rushed and gave us partially raw Gyoza which were soggy on the bottom. 3 minutes later the table behind us got a plate of crispy bottomed golden brown Gyoza. We didn't finish them and told them the dough was still raw, they looked, said "Oh yeah you're right, sorry" and left the charge on the bill. When you serve a dish incorrectly you don't charge for it, basic restaurant etiquette. If it's cold outside and you want nice chicken soup, this is good. If you want great Ramen, not sure where in Toulouse but I'm certainly searching.

I was able to get a reservation same-day on a Saturday night, and they held the table for me when I called to say that we would be late due to traffic. My husband had gyoza, chicken yakitori, a California roll and some sushi. I had one of the combos, with a miso soup, cabbage salad and scallop tepanyaki (stirfry) with rice. The cabbage salad was delicious with freshly toasted sesame seeds. My scallops were perfectly cooked, moist and sweet. The accompanying veggies were a little too soy-sauce-salty but were mostly good (mushrooms, zucchini, etc.)

We had to wait in line for 45 min for a party of 3 - don't come with more than 2-3 people otherwise you may not get a seat. They also don't take reservations as the place is one long bar along the kitchen with 10 seats - it's very small. They have 5 different noodles you can choose from the menu, the Shoyu ramen being reasonably priced at 9€, and they have one with extra meat, and a noodle dish with dipping sauce (this is probably more of a summer dish when it's hot out vs. getting a bowl of hot ramen). The noodles are fresh and chewy, just like they should be, and the broth is flavorful but not salty. The only thing I didn't care as much for was the meat - the pork was a bit chewy and fatty for my taste, and was just okay. But the noodles and broth were great. The gyozas are some of the best I've ever had - I saw them putting the filling into the wrappers and frying the gyozas right after we made them so they were super fresh. The skin was light and crispy and fried perfectly, and the filling was juicy and tasty. I would definitely recommend this. Overall, 5 stars for an authentic place to get ramen in Toulouse which is hard to find. They only open from Tuesdays-Fridays for lunch, and only on Friday and Saturday for dinner. They also open for lunch on the 2nd and 4th Sunday of the month. Be prepared to wait in line for a spot at the bar and expect for your lunch/dinner to only last 30-45 min so that you can leave when you're done eating and make room for the next group waiting in line. They take credit cards which is great. I will definitely be back here again to try the other ramen and noodle dishes! One of my new favorites in Toulouse.
