I'm willing to say we caught them on a bad day...but I'm not sure. Okay, let's break it down…read more First, I'm not writing this in anger or mad at the restaurant. They are hard working folks that were very friendly. I'm only coming from an honest opinion of our visit and the food we were served. We were in town for the Texas Country Music Hall of Fame and as always...looking for a good BBQ joint to check out. We ended up out at Chuck's and were to say the least disappointed. From the reviews on Yelp, it looked very promising. However for me and my wife it ended up being underwhelming. We got two two meat plates with brisket, sausage, pulled pork, and the ribs (let's us try everything and get the whole experience). Both plates came with two sides (we chose potato salad, pinto beans, Cole slaw, Mac n cheese). Added two drinks...for a total of $39 rounded up. I thought it was a bit high but I have paid more for BBQ and I had high hopes for Chucks. The place was what you expect for a BBQ joint out in the sticks. No complaints there at all. The staff was friendly even though a few customers came in about 10 minutes before 4 (their usual opening time). Got our order in at the counter and got our drinks. The place filled up pretty quickly and it built my anticipation of this BBQ even higher. When they called our name to get our food. My first thought was (the brisket was a little chintzy). One slice of top and one slice of bottom cuts only (I had asked for only top). My wife only got two small ribs on her plate. But hey, I get it...we live in a very different world than we did a few years ago...everything has doubled or more in price... Okay, so how does it taste? For me, brisket always first! Hmm, tender and moist to the touch and flavor was good...but nothing to write home about. Wifey goes in for the ribs...again tender and moist...fell off the bone. But, didn't jive with the flavor. Okay, let's try the sausage...MMMMMmmmm juicy and full of flavor and in a real sausage casing (if you know, you know). How bout' that gorgeous pile of pulled pork? Hmmm...not much flavor at all. Almost tasted like it was steamed or boiled in water...then smoked. Okay, let's try the BBQ sauce on it all now. Hmmm, sauce was very hard to place...didn't have a deep rich red color like most BBQ sauce does...it was lighter almost like it had a cream of some sort in it and the flavor was not working with my flavor palette. The sides, all okay (again nothing to write home about)...except for the Cole Slaw...it was very earthy and had a very mild sweet flavoring which I didn't enjoy at all. My wife kept saying she tasted something that reminded her of Asian food...I hadn't tasted it that all. Then she offered the last bite of her ribs. There it was!!! That Chinese food flavoring...I think it was Five Spice. Neither of us enjoy that spice. Not meant to be on BBQ of any kind (in my world). Anyway, overall we were not fans of the food. I appreciate the effort and work that goes into smoking BBQ and would never say don't go to Chucks...I just think they experiment with their flavors and I'm more of a traditionalist when it comes to BBQ. Clearly by their YELP reviews there are WAY more people that enjoy Chucks BBQ than people who don't. I'm just giving an honest review from a BBQ fan. Hope it helps.

The brisket has a nice crispy bark and the meat is tender and flavorful. This is about as good as brisket gets. The sausage tastes great as do the pork ribs. The flavor is spot on. The warm BBQ sauce only enhances the experience. Nice touch. The pinto beans were my favorite side. Perfectly cooked with chunks of meat in the broth. Yummy! Not a fan of the potato salad because it's mustard based and I prefer mayonnaise but really it's fine, it's just a matter of preference for me. The staff is incredibly friendly and quick to check on you to see if you need anything else.

Ohmygoodness.....you guys.....this place was even better this time! We arrived during the lunch…read morerush on Christmas Eve EVE and Santa Claus even showed up! We ordered ourselves a little sampler this time of sausage, pulled pork, brisket, potato salad, cream corn, pinto beans, and the Marvelous Taco. They really knock it out of the park with the brisket and pulled pork. The sausage had the very satisfying snap and was very tasty. There is a good smoke level on everything and I cannot wait to return. We had a magnificent time standing in line and visiting with everyone, including Santa! I would like to mention also that this place is very clean and has clean restroom. The staff here are super friendly and a lot of fun to visit with.

We visited on a Tuesday right when it opened, and it was already filling up with happy patrons. The ample parking and friendly staff made for a great start to the meal. The Meats The brisket had a delicious salt and pepper bark with a nice crust. While it could have been a bit more moist, the rich, smoky flavor was on point and a great representation of a classic Texas brisket. The ribs were a definite standout. They had a beautiful, deep smoke ring and came clean off the bone with a perfect pull, not just falling apart. The dry rub bark was fantastic, allowing the natural smoky flavor of the meat to shine. Both of the sausages were excellent. The house sausage was juicy with a satisfying snap to the casing and a nice peppery kick. The boudin sausage packed a great spicy flavor without being overly filled, which can often make boudin greasy. The Sides & Appetizers We also tried a couple of the unique sides and appetizers. The jalapeño poppers were a pleasant surprise. I usually prefer a protein filling, but the cream cheese had a wonderfully flavorful and creamy texture that won me over. The jalapeño crème corn was another highlight--incredibly creamy with a tangy, spicy kick from the pickled jalapeños mixed throughout. Overall, this barbecue joint is a must-visit. The quality of the meat and the delicious sides truly set it apart.
