I turned 59 years old 7 months ago was so sick and depressed I could not…read morefunction- literally. I began gaining weight over 10 years ago even though I ate healthy. I could NOT lose weight even though I was eating low fat, lots of organic veggies and whole wheat pastas. I went to see 'doctors' and they assumed I ate cookies and ice cream. I became extremely ill and the day I decided to go to the doctor, I barely made it. I was throwing up and found out I had type 2 diabetes which explained the tooth and periodontal problems, foggy-brain, anxiety, and exhaustion, among other things. I contacted Maxine, and told her what I had found out. Maxine designed a food plan and simple exercise regimen for me and I stuck to it. Literally within 2 weeks my blood sugar went from 358 to 110, and in one month it was normal. In 3 months the doctors were shocked when they retested me for everything from blood pressure (which had been high) to blood sugar, and said "this has never happened". The diet they suggested would have kept me on medications, and I would have gone down the road of depending on meds with no weight loss. Maxine is educated in the science of how obesity, diabetes, high blood pressure, periodontal problems, high cholesterol all stem from the same faulty assumptions about diet, and exercise. I lost 60 pounds over several months and, more importantly, within the first few weeks I was back to my happy self. As I was losing this weight, and lowering high BP and then reversing symptoms of diabetes, I sometimes got frustrated and complained with "how come I'm not losing weight faster", or "I don't feel good", or "why does this hurt?". But Maxine was knowledgeable in being able to tell me what was going on with my body during the process. I realized then that I never was clinically depressed, it was just my body that was so out of sync. I would be happy to send any of my medical information through Maxine that was taken at the U of W with the numbers and data that show such a dramatic change that the entire staff at the clinic was amazed to see. They are not trained as Maxine has been - and if you have any of these problems, this may be the way out for you as it was for me.

Having…read morealways eaten a whole-foods diet, I was disappointed to find that menopause has been very challenging for me. I experienced monthly severe affects during my period: dizziness, shortness of breath, fatigue, inflammation, foggy brain. I did my best to schedule time off when I knew my period was coming, because I'd often be fairly incapacitated. Since I've always been a believer in the huge role diet plays in health, I decided to try Carole's elimination diet to see if I could eliminate any foods that were contributing to my symptoms. It took two months and lots of willpower, but I've got my symptoms minimized by eliminating certain foods. To my surprise, one of my problem foods is one of my favorites--oatmeal! I tested it during my last cycle and all my worst symptoms resurfaced! Oatmeal and me are through, at least for this stage of my life. Carole's support and encouragement have helped tremendously. And the Restart cookbook has lots of great substitutes for some of my past favorite meals. I also greatly appreciated the opportunity to do the elimination diet in the company of others. She left a needle in my arm, which I removed at home when I realized my upper arm muscle was hurting. 2. The machine they use to heat the feet didn't work. She asked me to remove my shoes & socks and my feet were frozen when it was complete. Other than that she was pleasant & the affect from the acupuncture didn't last long. I did schedule a couple more appointments. An hour before my second appt in which I had already woken up early to attend, the receptionist called me to let me know that Christine was sick and would not be there. So we canceled, I didn't reschedule since I already had an appointment booked for 2 weeks after that. Day before my 2nd appointment I get another call, the receptionist again... had to switch my appt from Am to Pm because Christine had something come up. I said ok 230pm is fine, since I had this weekday off to do my appointments. Then the receptionist calls again about an hour later, saying she actually needs to cancel because Christine won't be in. So she tries to reschedule with me, instead says I'll see if Christine can fit you in sometime after I get off work that week, that she would call me back. Never got a call back. And I'm ok with that. I don't need that kind of negativity in my life! If I were to cancel an appointment an hour before the appointment I would get charged!
