We had the pleasure of talking with the grandson and his wife, who now run the business. They were incredibly sweet, welcoming, and genuinely happy to answer questions and help us pick out products. We brought home a jar of their extra hot green salsa, and wow...it is absolutely incredible. It has a serious kick, but the heat never overpowers the flavor. You can actually taste the fresh Hatch chiles instead of just burning your mouth. It's hands down one of the best salsas I've had. Supporting a third generation family business while taking home an authentic taste of Hatch made this one of our favorite stops in New Mexico. We'll definitely be back next time we're in the area.

They used to be really good but they completely lost me after that tripita burrito today. It was mostly tortilla with barely any filling. They didn't even put beans on the burrito. The tripitas tasted okay but there was only a mouthful worth of them. Go to Si Senor right down the road. Si Senor isn't much more money and you get a burrito that will fill you up a couple times. I can't eat a whole burrito from Si Senor in one sitting. I feel like I was totally ripped off by Chavira's today. Never again!

We call ahead to be sure they have both the extra hot as well as the hot green chile before we make the trip. We are able to pick out the chile we want before it is roasted and cleaned as well as spices, frijoles, enchilada sauce, jalapeños, gueritos, and my favorite curtidos! After roasting and cleaning, they put a large plastic bag in out ice chests and we are able to transport the chile to Tucson and easily transfer it to quart freezer bags for freezing. There are many choices for your chile in Hatch but Valverde is simply the best, with friendly and helpful staff.

Not too hot (medium rated) and very flavorful. We also bought a ristra, which traveled well to the West Coast and then back to St Louis, and which is now hanging in our kitchen. Their pottery selection is excellent and well priced. We didn't have room for anything large, so passed on buying any pots this time. We'll come back and try again soon. The only thing that keeps me from offering five stars is the relatively low stock of sauces. That may be just be the result of our timing--we were there in October.
