Aside from the phenomenal ice cream which earned them several national media spotlights, the thing about The STIL that stood out to me was their staff. They are super friendly and incredibly pleasant. They allow you to sample as many flavors as you want. And they don't rush you. Shoutout to Ashlyn for helping me figure out what to order. I felt like I was talking to one of my best friends! Haha. You know that the staff truly cares about their customers, and they deserve to be recognized as well. There are so many flavors to choose from! Booze-infused options are available but make sure to bring your ID. I ordered four scoops: 1. Somewhere in Mexico (tequila + lime sorbet) 2. I found this ice cream in the freezer section of my hotel's shopping area, and the front desk told me about the local store. I took my grandchildren there and just loved the many different and creative flavors. The staff was extremely friendly and patient as my grandchildren asked to taste several different flavors before deciding. Two of my grandchildren chose "Lick the Spoon" a delicious and rich brownie batter ice cream. I had a Halloween themed flavor which was pumpkin ice cream with mini-marshmallows. Another of my grandchildren had "Vanilla Cream cheese" which was to die for! The next night we went back to try more flavors. The flavors all seem to be thoughtfully crafted and fun while filled with flavor. There is indoor and outdoor seating. They also offer gluten free, dairy free and vegan options. I had the Idaho Wilderness which is lavender and berries, my little one had the espresso and caramel (coffee explosion flavor), my older daughter had the strawberry sorbet (very good and very refreshing), my brother in law and sister had different flavors that they loved (my sisters had coconut and peanut butter tasting one?) and I think he had a brownie flavor. Bacon has become such a cliche that I shake my head whenever someone comes up with a stupid way of adding it to something, just because they can. I hoped The STIL was more than just gimmick ice cream and was willing to give them a chance. I opted for a strawberry sorbet, which, if made right, should give you a much more intense flavor than when the strawberries are mixed with ice cream. They delivered. It was wonderful, almost as good as Julia Child's recipe. Smooth texture with an explosion of flavor. I'm not as hip on their insistence on creating silly names for each of their offerings. Just tell me what you're serving. The woman serving was friendly and offered samples as people looked to make up their minds. This is another one of my 'must visit every time' places in Boise. Everyone knows I won't shut up about The Stil. I have stickers and a tumbler to demonstrate my love. Despite living in another state, I think I've tried most flavors. Fresh Powder and Deja Vu are top of my list. And of course, would it be Idaho without Idaho Wilderness, a huckleberry flavor? The only ice cream here that has ever disappointed me is "After School Special" - the peanut butter flavor isn't that strong and the no bake cookies in it taste a bit strange.
