    Apple Mesclun Salad
    Rizwan P.

What you need to know: Chef Chip's food is AMAZING! Seriously, this was definitely an unbelievably delicious meal - I highly recommend the herb-crusted rack of lamb and apple mesclun salad. His prices are actually reasonable for his high quality. He's very accommodating and flexible if you have allergies or wish to put a twist on his signature menu items. He's very adaptable to the environment (we had an older smaller oven that he made work) and just a very kind human being! I wanted to plan a special night for a friend of mine who wasn't able to celebrate her birthday properly due to the pandemic we're all in currently (gotta love 2020). I saw a few friends had been using private chef services and decided to do my research, which is when I came across Chef Chip's listings and saw how highly rated he is. Chef Chip: I absolutely cannot say enough great things about Chef Chip. From the moment I reached out to him with my ideas, he was very helpful, kind, and willing to work with me to create the perfect experience. In-person you get the same deal. Since it was just the two of us for dinner and the kitchen/dining room are virtually the same room, Chef Chip was very engaging with us, making us laugh and sparking interesting conversation throughout the night. It was incredible to learn about the Chef's journey and how he's completely self-taught. Overall, you're in great hands with Chef Chip as he's always willing to work with you to create the experience you desire and he's just a very down to earth and kind person. Food: - Appetizer course - Calamari Fritti. The Calamari was tender and not chewy at all, perfectly crisp, and the vodka sauce on the side was a perfect citrusy and tomatoey compliment to the dish. - Salad - Apple Mesclun salad. Probably one of the best salads I've ever eaten in my life. The gorgonzola, shaved apples, and that lemon honey vinaigrette combination was so flavorful and a perfect light dish in between the appetizer and main course. I will say the highlight of this salad was actually the spiced walnuts which gave a unique texture and flavor to the salad - didn't surprise me at all to learn that the "spice" used on these walnuts was actually made by the Chef himself! Once again putting his own special twist on an already amazing dish. Main Courses - I wanted to try something different, so by my request, Chef Chip prepared an exquisite lobster tail on top of a delectable risotto with a steak medallion. I opted for his tried and true herb-crusted rack of lamb with the red wine jus, and risotto cake. For my friends course, she LOVED it. The lobster tail was cooked perfectly, the risotto underneath the tail had bits of lobster meat from the rest of the lobster in it and was so tasty! Her steak medallion was done just how she likes it and the veggies were a nice compliment to such a rich dish. My herb-crusted rack of lamb was a whole experience. Before cooking it, the Chef let me taste his homemade pesto that would encrust the lamb and by itself the pesto was phenomenal! When I finally got to taste it on the lamb, I was just in heaven. The lamb was perfectly cooked to what I like (medium-rare) and was so juicy. The risotto cake was something I've never had before, and as a fan of fried things, this was just stunning. I mean it's fried on the outside and creamy on the inside, what's not to like? The red wine jus that accompanied this dish just took it to the next level - I seriously would bathe in that jus because it was just so damn good! Dessert - Finally to end the night, we went with the Chef's Molten Chocolate Soufflé which was an amazing end. The soufflé was cooked to perfection, molten center, fluffy outer, and the vanilla ice cream made the dish that much more delicious. Price: This was way better than I thought it was going to be. I ended up paying about $260 in total for the dinner (which included food costs). Considering the convenience of having Chef Chip come to us, and the quality level of the food, as well as his overall demeanor, I'd say this was a great price point as you wouldn't get everything he offers spending the same amount at a restaurant around town. All-in-all, I'll definitely be securing Chef Chip's services again in the near future and wholeheartedly recommend him to anyone seeking an upscale dinner from a fun and engaging chef in the comfort of their own home. His food is phenomenal and he is an excellent chef.

Fried pork belly with cauliflower purée and blackberry semi glacé

Chef Chip was AWESOME!! He served us a six course, ambulatory, small-plate dinner for 30. We had the polenta with mushroom raging, fried green tomatoes with succotash and shrimp, porcini roasted duck breast with orange saffron sauce, lamb merguez sausage with raita, fried pork belly with blackberry demi glacé, and bread pudding with whiskey sabayon!! Everything tasted GREAT!! Service went well! There were only two small hiccups: 1. Chef uses his sons to help out with service. They are pre-teen/young adolescents and were not quite as worried about sanitation. One was seen cleaning the edge of two plates by licking his thumb and wiping it down. However, when called to Chef Chip's attention, he immediately addressed the behavior and it wasn't repeated. 2. Chef provided the dishes and silverware. However, there weren't sufficient forks so guests were instructed to hold on their forks for all six courses, which was hard with game play and other activities. The most impressive thing was that we had a family emergency and he was super flexible as we tried to figure out what needed to happen next. Overall, the experience was amazing!! Servers were friendly and did a super job making sure everyone was served and all needs were being met!! I would definitely recommend him and use him again!

    Calamari

Chef Chip is the real deal. We had the calamari...best we've had in forever. His salad with shaved apples, gorgonzola and self spiced walnuts is a must have. Hand cut filet REVERSE SEARED with to die for bordelaise sauce that I'd eat a cardboard box if it were covered in it. Gruyere potatoes with nutmeg were a show stopper for my husband and preteen. Molten chocolate souffle was the perfect finish. His prices are so reasonable for the insane quality you get. I worked in fine dining for years & am picky. I'd recommend him to anyone I know. He's a gem. He not only cooked an amazing meal, but taught me as he went along (I love cooking). Bonus, he took the time to fix a burner on my stove that wasn't working & taught us out to make 30 min homemade, insane fries!!!! Just book him....before I do.

We Hired Chip for a bday dinner party for my sister. My family was very happy and we had a good time. My favorite was his seafood gumbo ,which is a lot for me to say because I've had gumbo many times and never liked it that much. The eggplant appetizer was also a win in our books. We had the lamb dish and my dad and bro in law said that was their fave of the night so I guess you can't go wrong with Chip. I'm happy to recommend him to someone and we would hire him again.

    Delicious crab fritters

I purchased a romantic dinner for 2 from Chip last year as a Christmas gift. It was AMAZING and now that Christmas is approaching again, I've already reached out to do it again! Last year we had the crab fritters, Apple Mesclun Salad, Seafood Stuffed Flounder and the Molten Chocolate Souffle for dessert. Each course was DELICIOUS and prepared with such care. We sat at my counter island while Chip cooked (he brought all his own supplies) and we all just chatted away. It was a lovely evening and I can't wait to do it again!!

Chef Chip and his team created a meal for my friends (twins) 40th birthday party! We had six different small plates. Each was course worthy. The succotash with fried tomatoes and grilled shrimp to the duck breast with mashed potatoes to the lamb sausage all were are amazing. The night was topped off with a New Orleans style bread pudding with warm whiskey cream sauce. Presentation added to the taste of every plate. His service and timeliness was very professional. I might use him for my birthday!!

Richard went above and beyond anything we could have asked for our wedding and would highly recommend him to anyone looking for a full service caterer and staffing for your wedding and/or event. We initially reached out to Richard looking for a vendor to make appetizers for our wedding (we had different vendors for the other courses). He had a wide selection of foods choices, where we selected four appetizers, our personal favorite (and the one with rave reviews from our guests) was the Mediterranean Grilled Lamb Chops with Cilantro Mint Aioli. In addition to the food, Richard offered very competitive pricing on other services as well - servers, bartenders, linen rentals, silver wear, full bar package, and so on. He was very conscious of our budget and offered multiple alternatives for each decision, which was greatly appreciated. Since our reception was at a venue where we could bring our own food and alcohol, it also required us to take care of everything else. Having Richard to take care of so many items was such a huge blessing.

There was a lot of love for the burger sliders, chicken tenders, and shrimp. The servers were so helpful, friendly, and joyful during and before event. There were even three chefs, one of them a head chef, actually in attendance making food at the party. After the party, I found out that DeSilva even made a lot of custom orders for the party guests. Positive critique from the party attendees was that some of the food was cut too large to eat in one bite and they were not served with silverware such as the salmon shooters. The negatives: the owner missed her appointment to view our space, then showed up late to the reschedule appointment, and showed up at the start of the party. The owner's response was that she was bringing the hot food and wanted to show up as close to the party start as possible to keep the hot food hot. Showing up at the start of the party did not give us time to inform her of a few changes we made. We had purchased additional food to serve as sides to their passed hors d' oeuvres because there was lot of concern from our HQ the closer we got to the party about alcohol consumption, and concern from our employees about being full. We were going to put this out ourselves but the chefs from the caterer insisted that they would put the food out for us. I don't want to really go into it, but they put our food out so late and in such a small quantity that I feel like it was a power move by the chef to make sure their food received a spotlight. We should have served our sides ourselves as planned because our people love that type of stuff. There was a lot of waste. Part of our event package was pre-packaged to-go boxes for our guests which were to include cupcakes and macaroons. We received 150 cupcakes which received mixed reviews, some extremely good and some not, but no macaroons. We do appreciate the owner attempting to make it right by bringing fresh macaroons for our holiday lunch (arrived after the lunch) but we only received 47 boxes with two macaroons in each. Our headcount for the party was 150 people, the owner's response when asked if there were 150 macaroons was "I didn't know how many people you have". Also, one box of 2 was missing, and one box only had 1 macaroon in it. I don't think the desserts were worth $3k. The most aggravating issue was that we were charged $500 for cleanup and breakdown and the catering company did not clean up. They brought a grease fryer to cook the food and did not clean up the greasy floors that were caused by using the appliance, 10 over-full trash bags were left leaking all over the floor, the food that was dropped during preparation wasn't attempted to be picked up. They somehow used up all of our cleaning supplies without actually cleaning. The owner's response was that she was told (by someone who was not their point of contact) not to worry about cleaning and that we have a cleaning crew that would come clean the following day. They had been using this person as a point of contact instead of calling me because they "saw I was having a good time". I did not get to join the party until after 8pm, even then I was available to all of our vendors the entire time. She also said that she didn't know if there was a mop. Any of us could have provided this. The catering team was gone within an hour of the party ending. Leaving without telling me even though they did see me to ask me if I liked their cupcake. My team had to come in and clean the filthy nightmare that they left the next day. So in the end, would I recommend DeSilva's Kitchen? Yes, but with caution. The food and service was great, and your guests will enjoy them. However, you may be incredibly frustrated behind-the-scenes.

I made the initial contact with Figs and Honey to make sure they were available on our date and that they would be willing to travel to our obscure and out-of-the-way venue at a nature conservation center in Newton County. After confirming those two details, Mr. P. handled the rest of the planning. He reports that the lines of communication were always open and our event planner (Debbie) made everything very easy. Since we live in Denver, we weren't able to attend a tasting prior to making food selections. The menu is large and varied and everything sounded delicious. Unfortunately, we didn't have an unlimited budget, so we had to narrow things down and make smart choices. We wanted some passed apps while everyone waited for the happy couple to arrive, a few more passed apps after the vow renewal ceremony, and a buffet dinner. We supplied our own cake, which F&H kindly cut and served for us. Here was our menu: Apps: - Greek Skewers (Kalamata olive, grape tomato, artichoke and cucumber in feta vinaigrette} - Caprese Skewers (grape tomato, fresh mozzarella & Kalamata olive in basil pesto) - Bacon-wrapped dates stuffed with goat cheese - Crostini of barbecued chicken, queso fresco and cilantro slaw - Bruschetta with rosemary white bean hummus, caramelized onion, feta cheese and black olive Entrees: - Marinated Beef Tenderloin Au Pois - Lemon Artichoke Chicken Breast Sides: - Rosemary roasted potatoes - Grilled asparagus - Mixed greens salad We, and our guests, were extremely impressed with both the food and the service. Julia and her crew were on the ball! Anytime they had a question or concern, or anything we didn't even consider, she was quick to ask and come up with solutions. I feel like we really lucked out with excellent food and terrific service without having met anyone from Figs and Honey in person until just a couple of hours before our event began. The pricing was competitive compared to other area caterers, especially considering all the various menu options and the quality of the food. As Julia said to me, you hire a caterer so you can enjoy your party. Catering relies heavily on timing, and this experience fell far short of expectations for the price point. To this day, the owner, Clair, has never reached out to even communicate with me about what occurred. I would not recommend this caterer for time-sensitive events unless they improve their professionalism, punctuality, and client communication.
