After a challenging hike on the nearby Bruce Trail, I decided to drop in and check this place out and I am so glad I did. The sandwiches are freshly made with an excellent choice of meats, veggies and condiments. Too many to list all of them. I went with a spicy capicola with caramelized onions and roasted red peppers. Oh yes, it was in fact delicious! I also picked up a bag of their tortilla chips made with asparagus flour. They were crispy and so flavourful. The perfect side to my sammie. If you need a sugar rush, they do have some amazing looking fudge and baked goods. I kid you not. This place is a gem. Quaint country vibe, fresh food, super friendly staff. Saw this booth at the gluten free expo. I will be honest in saying that out of the 5 pasta booths…read morethat were on site I stopped in here cause I've never heard or tasted chickpea pasta. I guess you can make pasta out of anything that is really starchy so why not. The downside is that there is a chickpea taste, therefore, it's not as neutral on the taste pallet as other pasta alternatives making it a little bit of a challenge in making or pairing with complimentary sauces. Because of the protein fibers the pasta is a little more stiff and over cooking it turns it to mush, therefore, there is some coordination required as it doesn't follow the same prep rules as other pasta. I enjoyed the small sample that was provided and they were super nice at the booth, however, I can't see this taking off unless they figure out a way, either by blends, to make the actual pasta flavourless.

It wasn't the best charcuterie choice but the cheese was excellent. Their slightly curried chutney was also nice. The atmosphere was cute, they had a lot of selection in their cheese fridge to purchase and other food items in the store. The service was a bit sassy but not too bad, we never felt rushed. While we were sitting at the bar we watched them assemble many huge cheese party boards with customers coming in to pick them up and they all looked so beautiful!

We returned after waiting 40 minutes only to be told their system wasn't working and they were no longer seating customers. The problem isn't that their system failed--things happen. If we hadn't walked back to ask, we would have continued waiting indefinitely for a table that was never coming. We even offered to pay with cash, but they still refused to seat us, despite having put us on the wait list 40 minutes earlier. They simply dismissed us. This showed a complete lack of respect for their customers and our time. A simple phone call or someone stepping outside to notify the people waiting would have taken only a few minutes. Instead, they chose to leave customers standing around with no communication whatsoever. There are plenty of restaurants in Collingwood that value their customers' time. Based on this experience, this isn't one of them.

The food is served fresh and sometimes comes with a little carrot decoration which is shaped like a flower. On my recent visit, I noticed that there is a tip jar for the owners as well as an additional 25 cents being added to all interac purchases.
