The catfish was perfectly crispy on the outside while remaining extremely moist and tender inside. The shrimp was also delicious, and the yams had great flavor and a really nice texture. The food truck was extremely clean, which is always a big plus when eating out. It is located in a clean, open-air food court with plenty of seating. The consistency and roux were there, but the flavor profile? Just scrap it and start over. At first, it tasted like water had been added to the roux with very little seasoning. Then this weird underlying flavor kicked in. The best way I can describe it is something that almost tastes spoiled, but not quite. Whatever it is, it completely takes over the dish. I even took it home thinking I could doctor it up. I added seasoning and was able to bring in more flavor, but there was absolutely no getting past that strange base taste. My husband, who is a professional chef, took one bite and said, "Oh no. Throw that shit away." My niece tried it next: "Yeah...that ain't it." Three people tried. Three people agreed. The whole thing went in the trash. The roux and consistency tell me there's potential here, but that recipe needs to go back to the drawing board because whatever that base flavor is completely ruins the gumbo. I would say the same about the kalua pig - good but didn't wow me. The Chicken Katsu Bites were a hit. The crunchy and flavorful outside and tender chicken inside was very good. I wasn't crazy about the vinegar based sweet sauce that accompanied this dish but I had other options in the fridge. I would definitely come back here but would try some different items and order a vat of their macaroni salad.

The inside of the place is nice, has cute beach vibe to it. The people that work there are helpful and were friendly. I got the 2 plate which contains the Teriyaki Chicken and the Kalua Pig , the plate also comes with 2 scoops of rice and a scoop of macaroni salad. The Kalua Pork was very delicious! It was juicy and was savory. The Teriyaki chicken was great as well! They provide sauce and they recommend this clear sauce that you put on the pork which provides even more flavor to the pork. I've come here a few times within this month and will continue to come here when I get the chance !
