Chitarra alla gricia is probably the closest to a Roman carbonara that I've had in KC. The pasta was thick and flavorful, and went well with the sauce. It was a weekday lunch so I paired the meal with a nonalcoholic Italian pilsner (since I'm big on beer; @halfwaywestbeer on IG). I will say I didn't feel entirely safe sitting on their patio.
