It had the distinct texture of a pre-packaged Sysco-style product, or perhaps it was a cold portion reheated on a flat top without being properly rehydrated, leaving it dry and chewy. I understand that protein carries a high food cost, especially in the current market. However, a more effective approach might be to balance the menu engineering by leaning on lower food cost items, like seasonal sides or creative vegetarian options, to offset the expense of sourcing and correctly preparing higher-end brisket. This would allow for a better product that justifies its price point, covers its own cost, and ultimately helps the company's bottom line while maintaining the quality standards this town deserves. Choucroute is that iconic dish, for Alsace, France, and Nous specializes in that region. And having the dish for my last day in Alsace created a treasured memory. The name of the dish is French for sauerkraut. The dish is a sour cabbage braise. Besides lots of that, the dish usually is a mixture of meats and a variety of possible vegetables. A higher-end restaurant is likely to get creative, of course, but there are limits. For example, there should be some sauerkraut. There was almost none. Or it had melted so far it was indistinguishable. There were lots of carrots and green beans. Steamed and obviously not part of the braise. And some potato. Meat is optional, with individual portions that can be added. Each portion is a full protein, such as an entire duck leg and thigh. I wanted a mixture, as is usual for the dish, but that would have required ordering far more meat than I could consume. So I settle on the duck. What came was a vastly overcooked and astonishingly over-salted let that had almost certainly been deep-fried. And maybe more than once. On an average night, I'd have sent it back, but this was my last night in town and I was headed to see the last performance and I didn't want to engage in the hassle that returning the dish would have involved. My best guess is that the dish was left-over and reconstituted. Maybe more than once. I save one star for the times I can't finish the food, or there are other actual traumas. We had the two specials: my wife had the rib eye steak and I had the cioppino. The steak was served with a blue cheese butter, asparagus and mashed potatoes. The steak was so tender you could cut it with a fork. Truly delicious. I like to think of myself as a cioppino snob as it is one of my favorite meals and I've had it at restaurants all over the world. I must say Carson's recipe is superb. His broth has subtle flavors of tarragon and fennel. He adds sole, blue crab and shrimp for the protein. It's truly outstanding and one the best I've had. Jolie is not only the hostess, but also the waitress and pastry chef. She's charming and really fun to talk to. She let us sample some of the full-bodied red wines as well as a nice Petite Syrah. She also enticed us to try her peanut butter shortbread dessert. It melted in your mouth. The restaurant decor is charming and cozy. It makes for a very intimate setting and Jolie and Carson makes it feel like your having dinner with good friends. Still the best restaurant in Grants Pass. Because of that, I didn't have the opportunity to let her know about my salad or ask for a replacement while we were eating. When I asked about a refund for the salad, I was told they couldn't refund it simply because I didn't like it. That was frustrating, especially since I had barely eaten it because it tasted spoiled. Having worked in several restaurants myself, I've always been taught that if a customer is unhappy with a meal and hasn't eaten it, the restaurant should either replace the dish or remove it from the bill.
