    Brisket was very dry, no amount of sauce can save it. Mac and cheese gritty. Forever in search of the perfect collard greens and these are not it. Maybe they're store bought. Very disappointing.

    My son pleaded with me to write a review because he loved the food so much. He even wrote in their visitors book about how great the food was. My wife had the brisket sandwich and it was so tender and packed with flavor. My son and I had the buffalo chicken Mac bowl and it was easily the best Mac bowl I've had. Highly recommend checking this spot out if you're look for great BBQ!

    Been wanting to stop here and finally got the chance. The place is much cuter on the inside than what we expected (honestly not sure what we expected). I ordered the pulled pork platter which came with two sides and cornbread. I chose the jalapeno poppers and mac and cheese. It was a huge portion of pork...which was delicious. The poppers and mac were amazing. My hubby loved his ribs and onion rings and potato salad. Cornbread was great. I started following on Facebook for all specials. Only thing is no alcohol. My hubby would've liked a beer with his ribs. Maybe BYOB? That would be helpful. We will definitely return.

I judge every spot against what I'm putting out at home... and a lot of places fall short -- whether it's weak seasoning, lack of smoke, or just flat-out underwhelming flavor. But Wild Waylon's BBQ? Yeah... this place is LEGIT. We went all in: pulled pork, brisket, and the big dino beef ribs -- plus mac and cheese, green beans, a bacon-wrapped jalapeño popper, and the jalapeño cornbread. Every single thing delivered. The brisket had great flavor and was cooked right, the pulled pork was juicy and well-seasoned, and those beef ribs... absolute showstopper. Big, meaty, packed with flavor, and done exactly how you'd want them. Sides were just as solid. The mac and cheese was rich and satisfying, green beans had great flavor, and that bacon-wrapped jalapeño popper + jalapeño cornbread combo? Yeah... ridiculous in the best way. And the smoke -- you can actually taste it. That alone separates them from a lot of spots. The whole experience was on point too. The big pit out front lets you know immediately they're serious about their craft, and the staff was friendly, welcoming, and genuinely helpful the entire time. Prices are also very reasonable for the quality you're getting. This is one of the few places I've been where I walk away thinking, "yeah... they're doing it right." If you're anywhere near Fredericksburg -- or even just passing through -- this spot is absolutely worth the stop.

They offer a variety of pre-portioned desserts, cold alcoholic beverages, and meats and sides in larger portions to go We chose to sit outside, but the noise level was a major drawback--constant truck traffic and a very loud motorcycle shop next door made it hard to relax or enjoy the meal. These are things that the exchange cannot control, so if noise is an issue for you, sit inside and you will have a different experience. Overall, decent food, but between the cost and the noise, it wasn't the experience we were hoping for.

(Corn tortillas are available upon request). All platters come with two 8-ounce sides; from the 9 choices, we opted for the broccoli salad and onion rings. My husband selected a Smoked Pulled Pork SANDWICH ($10), which was served on a "signature-branded" bun with regular or spicy slaw (on the side) and with a bag of Lay's chips. All of our food was very good, and tasted fresh and homemade. The "branding" of the restaurant's logo on the bun was a fun touch, and we got a pleasant surprise in finding that the very tasty BBQ sauce on the tables was manufactured by GWB Hot Sauce in Clarksburg, WV (which we visit regularly to see a relative). Quantities were good for a filling lunch; we did not have leftovers for a brown bag. Two small comments: (1) my husband would've preferred a more generous helping of the slaw to put on his sandwich; and (2) it would be great to have a menu option that is vegetarian, perhaps a platter with three or four of the side dishes -- or at least showing a separate price for the sides on the menu. Ambiance. (4.5/5). The restaurant is country cute, with clean, well-spaced tables. Many of the tables were occupied while we were there for lunch but it didn't feel crowded. A few patrons seemed "local", and acknowledged the owner who was sitting with some buddies at one of the tables. The restroom was well-maintained. Service (4.5/5). There was only one (efficient!) waitress, handling in-restaurant and take-out orders, delivering food and drinks, wiping down tables, etc. Despite how busy she was, we felt taken care of. Well known standards from the area including Angelo's, Railhead, Heim's, Cousin's, and a lot of old places that are no longer in existence. Each one offering its own spin on a Texas standard. Upon moving to Virginia, I hadn't ventured out to any of the BBQ joints, but one of my associates from the office would often talk about ZZQ. I had assumed that Virginians had a concept of BBQ that was akin to shredding some meat and pouring BBQ sauce on it. So, I finally had the courage to visit ZZQ a few weeks ago to pick up an order to go. I arrived just before opening time on a Saturday morning. There was a line that extended just down to the street. Probably 40 feet or so. Figured this would go pretty quickly once the doors opened. I was wrong. After 15 minutes, I had only moved about 5 feet. The line was building behind me, but simply appeared to have gotten stuck somewhere in front of me. After about 40 minutes, I had finally made it to the front door. Inside, there was another line up to the cutters. There were menus to peruse and a large sign with all the cuts and sides you could think of. A great variety. As I got closer to the front, I realized that it wasn't the cutters causing such a slow procession, but the customers. As I listed to them talk, most seemed to have absolutely no clue what they wanted at all. Did I mention the menus and billboards? They seemed to want to chat about food and prep more than just order. Had this been in Texas, the mob of a line would have escorted you out. When you get to the cutters, you know what you want. No time to dilly-dally. I got up to the cutter and placed my order. I was getting a variety, so I went for 1/2 a chicken, 1.5 lbs of sliced brisket, a couple of sausages, mac and cheese, cole slaw, and sauces. The cutter gave me a chunk of the brisket. Definitely moist, a bit overly fatty, but tasty. Their idea is the "meat has enough flavor so that you don't need sauce." He also mentioned they smoke with oak wood. Good to know. The taste is good. Probably as close to a Texas style as you can get, but with some small exceptions. Mesquite wood is often used in Texas for smoking. Plentiful, but obviously costly to transport outside of Texas. It has an exquisite flavor that is just right for BBQ. The second is the sauce. I like sauce...GOOD BBQ sauce! Unfortunately this is where ZZQ falls short. I didn't care for their sauce at all. Too vinegary and liquidy for the lighter sauce, and too heavy with molasses with the other one. So, I had to make do an whip up a small batch of homemade sauce at home that helped to bring it together. All the folks at ZZQ made it for a nice experience. Definitely customer oriented and friendly. I think the BBQ is as close to Texas-style as you can find in these parts, but kind of a miss on the sauce. Still, I can either make my own or buy a bottle at the local store if I want. Definitely worth a try, but you will need patience with a barrage of people who clearly have a lot of questions about BBQ.
