You order at the counter and then your food comes out shortly after. The staff were hustling as we stopped in during a busy period, but helpful and our food came out fairly quickly. We tried a chopped brisket sandwich with slaw (loved the apple in the slaw!) and a two meat sampler with sliced lean brisket and pulled chicken. The meat is smoked and comes out dry - you get to visit the wall of sauces with 7 different options. We tried 4 different ones, and our faves were the Carolina Tang and the Smokin' Hot. The meat portion sizes are substantial - we left with enough leftovers for a third meal. The sampler came with a small piece of cornbread and we added a side of beans and tried the cajun fries. I'd say the sides had room to shine a little bit more. We would try a few different ones next time - the Mac and cheese looked tasty! I got the pleasure to meet the owner Adam and his nephew Nick who helps out on the truck. Adam said he opened Slo Motion in 2019 starting with just pop ups, and added the truck in June, 2020. Adam was a corrections officer with the state of Wisconsin and he decided to leave that in September, 2019 to follow his passion. Adam said God is at the center of everything for them, and he has eight kids, and his wife is a nurse, so he's always busy. All the food they make at the truck is made from scratch including the chips, hand cut fries, sauces and rubs. He has three BBQ sauces that he makes that are called the crabby apple, I94 and the Dairyland Inferno. I tried the crabby apple flavored sauce which was a sweeter type of sauce. That sauce I would definitely highly recommend trying if you love bbq. I also tried Dairyland inferno and it had some good kick to it, but I love spicy foods so it was good for me. For dinner I had a BBQ feast. I had a bunch of varieties of different kinds of BBQ to try. First I tried some beef brisket, which was so tender and delicious. Then a BBQ sundae which had mac & cheese choice of meat and choice of sauce, then I had cheese curds, and creamy coleslaw. I am a (somewhat) senior citizen at 67, and my GF recommended a few alternate places, but it was such a beautiful evening that I recommended that we go to ST and dine on the patio. We walked onto the patio and stood waiting to be seated. My GF has a problem with her foot, and standing and walking can be painful. I asked the waitress/hostess if we could please be seated. She said that someone would seat us. There were 12 or 14 tables and only 2 had people seated at them. We stood there waiting for maybe 5 or 10 minutes, and I finally decided to just seat ourselves (even if temporarily) at a small table with 2 chairs. After a few minutes, the Manager abruptly charged out of the restaurant door to our table with a very angry look on his face. He did not greet us, but instead said "Do NOT seat yourselves, if you do, you run the risk not being noticed or served at all". I corrected him and told him politely in a calm voice that we HAD asked to be seated, but were not, so we sat down. He did not apologize, but left if a huff. I guess the customer is NOT always right. I noticed that the Manager thanked other tables as they left, but he ignored us (fine) We completed our (great) meal, drinks and desert. The bill was over $100, and we tipped generously. Maybe the Manager was having a bad day, but he should not take it out on his customers. I am not sure if we will return to what was one of our favorite local restaurants.

Would not recommend them to anyone from my experience. P.S. I was a cook for 10 years, 4 of them cooking Mexican and from what i tasted I wouldn't have feed it to my dogs.
