The menu was very complete for the various meat served. I usually like to get Cabeza but I saw that they had chorizo on the menu. Most food trucks don't sell this type of meat for some reason. I really like the spicy flavor of this meat. So I ordered it with cheese and no cabbage (I hate cabbage). I added a flavorful red sauce from the condiment bar. Perfect for me but to hot for Matt. The meat was well cooked so you didn't have any orange grease dripping out of the taco. Some of the best chorizo I have ever had at a food truck. Matt ordered his usual carne asada taco and a carne asada corameles. As you can see from the photos, he added a lot of condiments from the outstanding sauce bar. He liked both of his lunch items. They had a very good condiments bar and had plates and cups to serve what ever you want to add to your lunch. The service was fast and efficient. They even had some one to help you at the condiment bar. They had a nice covered patio and Spanish music playing on the radio. The patio was very clean and the chairs were comfortable. Since Matt never finishes his lunch and takes the remains home for dinner, they offered him a bag to put the food and condiments in to go. The only drawback I saw was the noise from the road since they are right on the edge of the road. Nothing they can do with minor noise but after awhile you don't notice it as much. If you are in the area, I would highly recommend this food truck for lunch or dinner.

He is coming to town Tuesday and he wants to hit El Herradero Carnicera before I take him home. 30 years ago I was in some rural village outside Merida where I got the best chicken I have ever ate. It was simple, just beans, rice, and chicken. That chicken was marinaded in some kind of red sauce and the meat was so tender with a perfect balance of spice. I bought some El Herradero marinated chicken both the red and yellow (I am that Caucasian guy). I grilled their chicken to perfection and am not sure if the red or yellow one is the best chicken I have ever ate. One bite gives me an emotional response. If you like Mexican style meats, this is the place to go in Green Valley. Definitely pick up a couple Rib Eyes and marinated chicken breasts. And be prepared to be AMAZED. Thank you El Herradero. Thats always a risk because the food might not be as fresh as when it's freshly served. The woman ahead of me asked for well done crispy bacon wrap. I should have done the same, but I wanted to try it the standard way first. I really wanted to love this, but the standard soggy bacon wrap is not my thing. My stomach could not cope with the grease either -- this looks like pretty low quality bacon that is mostly fat. I was pretty disappointed and only finished half!

At first, I was skeptical about shrimp and cheese on the same taco, but it was a game changer. It was served with what I believe to be the same consume as what is normally served with birria. I added chips and salsa to my meal and it hit $30 before tip. Forgot to check the price of chips and salsa. A heads up, the tacos take a bit to get made so order ahead if you're in a time crunch. A bit of time passes and my name is called. I sit down and it looks like I got the wrong order of beef tacos. I take them back to the counter and ask if these are the right tacos. She apologized and said no that's the wrong order. It's going to be a bit longer. When I get the tacos, they're amazing. Some of the best tacos I've had. I normally love birria or Carne Asada tacos, but these an excellent for Lent on Fridays. The place used to be a fast food place of some sort and had a family owned restaurant vibe. I was happy to see that they still have the covered seating area with a few tables, should you wanna sit in there. They also have another seating area right in front of the food truck. When I got the receipt, it had no pricing information on it. We got such great service that I just let it go, especially since I had asked the total and he had already told me 60 something. However, when I looked at my account this morning, I was charged 72. So I am a little confused about that. I could have heard wrong though so I won't hold that against them. Honestly, the food is really good, presented well, and the salsas were amazing. They also have a handwashing station, forgot to mention that! I will be back to this place, and I will get a better understanding of the prices before I pay next time :D All in all, I would recommend trying this spot!
