    Paella at Raul Ramirez Winery.
    Joy K.

Tapa Stand catered a winery event in the Temecula area today. And wow! That paella is the best I have ever tasted! Paella preparation is a process that takes time, and one that adds to the experience. Tapa Stand had a tent set up and the huge paella pan over a propane fueled fire. It starts out looking like a soup. Then after a while, poof, there was a big pan of perfectly cooked and delicious seasoned rice, with Spanish chorizo, chicken, mussels, shrimp, octopus, and vegetables. The chef and his helpers welcomed us to watch as they prepared this meal that fed healthy (huge) portions to our big group. A paella party? What a great idea!!!

I met Alvaro Baeza by chance at a local business, dressed with his company logo. I asked him for a business card and was immediately impressed by his demeanor and pleasant personality. About five months later we asked Alvaro to cater a party at our house. Prior to the party, he visited us to discuss the most efficient setup for preparation and serving--something we had surely not expected. On the day of the party, he arrived at exactly the appointed time and began preparation along with two helpers. By the time our guests arrived the paella was well along in preparation and the tapas were being set out for us. The Txistorra (smoky Basque sausages on baguette) were an instant hit! By the time everyone was finished with tapas, the paella was ready to serve. His Mixta was the finest paella I ever tasted and was a tremendous hit! The delicious seafood taste in every bite of rice was fantastic. We were then served Crema Catalana (a Spanish version of Crème Brule) for dessert. As soon as we finished dessert, Alvaro and his crew packed up and left without disrupting the party in any way. Prior to leaving he took time to mingle with our guests for several minutes, to the delight of all. I really can't say enough on Alvaro's behalf. The next time we plan a Spanish-themed party I won't even consider anyone other than Alvaro. He really is the BEST!

Emily brought some Paela to work and it was sooooo bomb! Took some home and my son crushed it also! Alvaro, keep doing your thing!

Alvaro, Emily, and Team Tapa Stand poured their heart and soul into our celebration. Engaged during the planning process and prompt during setup, their tapas welcomed our guests as they arrived. And the tapas were delicious. But the star of the show was the Paella. More specifically, the creation of the paella for 35 people. Everyone was mesmerized by the process. And they are still talking about it. Great team, great meal, unforgettable experience!

Well he did not disappoint, from the appetizers to the desserts, each course was a hit. I am still getting compliments about the food served. I guess the best part of my experience with Perfect Chef was how easy they were to work with, nothing was too hard or complicated. Their staff were efficient and polite and did it all with a smile. Did I mention their cost was less then the other catering companies. I guess my experience was like the other reviewers....EXCELLENT. A service truck with all of the advertising for Flavor Chef Catering was driving extremely erratically, well over the speed limit, and was tailgating me to the point that I was worried they would hit me. I was turning into my residential area with my signal on when the driver of this truck tried to split the lanes and almost caused an accident. When you have all of your advertising on a panel truck, you need to understand that that's just as important as having a good or bad product. I would never use this company and I would make sure that if I ever have the chance I would let people know not to use them either. Driving so erratically that they almost caused an accident is more damaging than a bad meal.

I had guests coming up to me telling me how they quite literally cleaned their plates and went back for seconds. JP really went above and beyond to provide us with the best service and experience. He even made sure we were fed pre-ceremony. An all around wonderful guy. He's communicative, detail oriented, and a wonderful partner in what can be a stressful planning process. Could not recommend him and his team enough.

I gave JP (owner) an incredible amount of grace throughout the process and yet, he still managed to screw us. It was not a single issue, but a failure on multiple levels. THE SHORT VERSION: 1) he was very unprofessional overall in his communication. 2) he backed out of bar service a few days before our wedding and ghosted us after the wedding without a refund, 3) without exaggeration, some of the food at the wedding was inedible THE LONGER VERSION: The tasting went amazing. Ashley (who no longer works there) was extremely communicative. They asked for 50% as a deposit (which is pretty high) but the food was really good so we accepted. However, the tasting was the only good thing about our experience... 1. He was unreachable for months leading up to our wedding. The company phone number was either not taking calls, or went straight to voicemail. No response to emails. He finally got back to me about one month before our wedding (we thought we got scammed at that point). I gave him the benefit of the doubt despite all of this 2. He backed out of providing bar services a week before the wedding. I knew something was off when he wouldn't provide us with an shopping lists for our cocktails, despite following up. A few days before our wedding, our coordinator told us that his bartenders did not have proper certification and without one, could not serve alcohol (note: this was merely an RBS certification... EVERY OTHER bar service that we spoke with met this requirement). I specifically asked at contract signing if they were certified. Also, JP did not inform us that he was dropping out. I had to text him myself for confirmation, as I was unsure if he was going to hire other bartenders, if they would obtain the certificate, or if he was dropping out. Only then did he tell me he would not provide bar service. Again, this was 7 days before the wedding. He also took 3 more days to clarify exactly what service he would no longer be providing, when we obviously needed to know asap as we were scrambling to secure another bar service Even though this certification is the minimum requirement for many venues, he tried to pass the blame onto the venue, stating that he never encountered this requirement before (how is this possible? As a wedding caterer, he should have been familiar with these requirement, whether or not he met them). Huge red flag. Despite this, I didn't make this an issue 3. He promised to refund us for the bar service but ghosted us after the wedding. I disputed the charge and he finally responded, threatening to sue. 4. He was unreachable on the morning of the wedding. Again, poor communication.. 5. The food failed to meet even our lowest standards. The 50% deposit really had our hands tied and we couldn't back out despite the red flags. As long as he showed up and served food that was remotely close to our tasting, we'd be happy. However, he totally skimped out on the quality and quantity. For example, our passed appetizers were smoked salmon bagels. I'm not sure if he used old bagels or what, but the bagels were stale and rock hard. My friend tried to bite down on one and immediately spit it out. My aunt had to warn guests not to eat them. He swapped out some of the items that we paid for with inferior options (ie: we paid for a fig and honey roll... he just added a basic dinner roll). Guests told us they were confused that our menu did not match the food. Some guests got half a dinner roll (meaning they didn't have enough) The main entrées did not match the quality or size of the original dish we were promised at the tasting. I understand that preparing a meal for 2 people is not the same as 100 people, and there is inherently a drop in quality on the wedding day. However, this was completely different. Many guests attested that the salmon entree was inedible as it was incredibly dry and overcooked. Look at the photo of the tri-tip I uploaded and the difference between what we were promised and what we received We asked for leftovers to be packed but never received them. All in all, I was super understanding and even allocated 15% as tip for his team despite his poor communication. Despite this, the fact that he never gave us a refund for the bar service is appalling.

But more than that, was the amazing food menu. I can't even express in words how amazing the appetizers, dinner entrees were. And it wasn't just me. From the very beginning, Sierra made sure all of my clients requests were met and the communication was the outstanding. Billy (chef) doubled up on outstanding with the most amazing, flavorful, unique and tasty appetizer and dinner menu. You can definitely taste the love and effort he puts into his cooking. Quality imagination presentation --…read more Four Seasons Food Catering is owned by the marvelous duo Billy Burd and Sierra Ridenour-Burd. They make an amazing team. They catered a party for us at the The Thursday Club in Point Loma in March and dazzled everyone. When we were trying to choose a caterer we were attracted to Four Seasons by the imaginative and creative flair of Chef Billy Burd's cuisine and by their very positive reviews. One thing that caught our attention about the reviews was that many of them were fairly long. Apparently reviewers were not satisfied to give 5 stars and a paragraph of praise, they really wanted to testify. They felt that Four Seasons was special and they were motivated to let you know just how special. After experiencing Four Seasons catering service we can understand that sentiment. The culinary experience Four Seasons provided was marvelous. The dishes were imaginative, taste tempting, and a delight to the eye. Guests loved the appetizers that were passed: shrimp wrapped in basil and pancetta, mushrooms with escargot, parmesan crusted artichoke hearts. The stationary display had a choice assortment of cheeses and a selection of cold seafood that included jumbo shrimp, smoked salmon, ahi poke, and a sashimi platter all beautifully presented. Suffice it to say the buffet was equally spectacular. Chef Billy takes pride in the quality of the products he sources. The filet mignon for example was gorgeous. The shrimp served in the seafood display were so tasty that they made you stop and take notice. This was a once in a lifetime kind of party for us so we pulled out the stops when we were choosing items for the menu. It's very much to Billy and Sierra's credit that part of their response was to say that and they would be happy to offer some more budget friendly variations. We appreciated their inclination to work with clients to find good solutions to their needs. We enjoyed meeting with Chef Billy one time early in the planning process, but other than that, all the planning and coordination was handled by Sierra. She is fantastic and a pleasure to work with. She gave us recommendations on the initial approach to the menu, on down to details like the serving schedule, linens, and the table floor plan. We communicated mostly through email which was very productive because her emails, besides being congenial, were always clear and complete. And it was amazing how quickly she would reply, usually the same day. When it came to the final week before the party and it was time to summarize all the various emails and discussions Sierra nailed it, she recapped everything perfectly. The Four Seasons staff were wonderful. During the set up time they operated like clockwork. During the party they could not have been more charming and gracious. This is another major point to Billy and Sierra's credit. It takes care and effort to assemble a team of this quality--a group of individuals who interface harmoniously not only with the guests, but with each other, and with other vendors such as the florist. The whole event flowed thanks to the staff. When you are planning a special event you hope to create a joyful and memorable experience for all your guests. Four Seasons is a caterer with an amazing combination of culinary artistry and service craft. Choose Four Seasons as your caterer and you can't go wrong.

We worked with Rachel and Jordan and booked about 1.5 years in advance. They were communicative and very flexible with my multitude of changes throughout the year and a half working with them. I was even able to add a cake tasting and cake later on and change certain rentals very close to wedding date. They were patient and accommodating and willing to make just about anything work! My guests were incredibly happy with the food and the service, and my husband and I absolutely loved the waiter assigned to us on wedding day! The only thing that went wrong was half of our string lights (required by DH) went out for the entirety of the seated meal due to an installation error. I'm not docking any points from rating as this was a genuine mistake and WTC reached out to their EPR contact right away to have them return to site and get it fixed. It did take about an hour+ to resolve but WTC was very apologetic and even provided a a partial refund for the lighting. One thing we were bummed about was that cake service occurred during the main dance floor time and if cake wasn't accepted from the server, it was a missed opportunity. According to my guests, about 90% of people didn't get cake as it wasn't left on tables and most people were on the dance floor. 2.5/3 sheets cakes remained at the end of the night. One big win was TWC was so organized and accommodating for the many dietary restrictions/allergies we threw at them and served our guests appropriately. We received no complaints and guests and family said it was handled seamlessly! All in all, my husband and I were so pleased with our decision to work with WTC and will forever cherish the role they played in making our day amazing!
