The salsa itself has just the right proportion of fresh chopped cilantro to finely diced onion and tomato. Meals come served on real Fiestaware plates, hot from the oven. When sitting on the Los Amigos heavy hand-carved wood chairs in front of the full colorful plates, it feels a bit like home. Service is friendly, prompt, and happy to help with special needs. Many meals come as advertised with slices of avocado or fresh fruit. The fish and shellfish are fine in quality. I especially recommend the shrimp dishes including the camarones cocktail, which is a fun and filling shrimp cocktail served in a red gaspacho with sliced avocado and crackers. It's a great light lunch.

Upon being seated, guests are presented with a simple yet genuinely authentic menu. The flavors remain consistently exceptional, a quality I believe is essential for any restaurant hoping to thrive in Alexandria. Caro's is far from the typical, run-of-the-mill Mexican restaurant where meals are hastily assembled from a hot line and served with an inflated price tag. Instead, each dish reflects care, authenticity, and craftsmanship. Complementing the cuisine, the staff and atmosphere provide an added layer of warmth and charm. The establishment also features a small shop offering imported goods, further enhancing the overall experience. I strive for honesty and objectivity in my reviews, and I rarely award a full five stars. However, Caro's is an exception. This assessment is not based on a handful of visits but on years of consistently outstanding dining experiences. If I were to choose a single word to describe Caro's, it would be authentic. This restaurant exemplifies what true, heartfelt Mexican cuisine should be.

The street tacos --though the burritos and fajitas never disappoint either. What makes Caro's stand out is more than the food--it's the people. The owner and staff always greet me and make every visit feel like home. No music but lively, friendly chatter all around. Fresh chips and salsa were brought to the table, and I thought it a nice touch that everyone got their own salsa to dip in. The hot sauce paired nicely but could've been spicier in my opinion. The rice and beans were so delicious that I swear I blinked and they were gone. Price point was excellent as well--Loved this place!
